Question: someone mentioned having a bag of tricks when we are waiting in lines for rides. Does anyone have recommendations for that?
We play "I spy" a lot. Not necessarily at WDW, but whenever the kids are bored. That plus taking turns playing on my phone. I have a small bag. Some rides have entertaining lines - like Toy Story Midway Mania and Haunted Mansion (even though the ride itself freaked my kids out). Dumbo has a play area in the line section. You will probably hear whining. Just try to stay positive and act like you are having fun!
My kids were "spoiled" by fast passes at the start of our trip. Day 1 we did a half day at Epcot after traveling, so everything we rode was a FP. On day 2 we had to stand in a couple lines. Even when they were short, the kids were whiney and expected a FP for everything.

What I'd really like to do is have some place to dump all of our budget in and then just use that instead of the park instead of touching our bank accounts with the debit card or whatever.

Why no charging on magic bands?
If you want to avoid the new CC/Debit card hold amounts that WDW as instituted, you can have them restrict your magic bands so that you can't use them to pay for anything. There are people in some of my DVC groups that are having their funds tied up by Disney CC authorizations.
Also, if you want to control your spending, it is easier to pay cash or put your spending $ on a Disney gift card. No temptation to overspend if you have no cash left.

I also realize that the days we are doing the more upscale restaurants, costs will go up as well. There are two adults and one child, none of us eat that much, and the adults don't eat more than 2 meals a day, on average.

Also, apparently we’re supposed to join this FB group and then do a gift swap with random people on the cruise. We declined, because I’m not at all interested in giving or receiving things from strangers, but my mom made it seem like we will be the only people to opt out (which I know can’t be true), so she’s making some trinket for our door. Did you participate in this?
We did join the FB group, but we did not participate in the Fish Extenders. We were also on a 7 day cruise vs 3 day. We did have magnetic signs for our doors that my sister's friend made for us (the was a group of 19 of us spread across 6 rooms) but it wasn't something that was a necessity.
Castaway: A few from our group did the 5k, a few of the adults did alcohol tasting.... but mostly, we just relaxed on the beach and played in the water. Lunch was no additional cost (it was like a grillout) There is plenty to do on the island itself without booking any excursions/activities
