We are going to Disney at the end of May for 4 days. We’re doing 2 days at MK, 1 day going to the beach, then the last day we want to go to a different park. We were originally planning on Universal, but my mom keeps changing her mind. I’d like AK.
It’s going to be me, my 7 yo and my 65 yo mom. Thrill rides are out.
My kids loved Hollywood Studios--Jedi Training, Indiana Jones show, Star Tours, Frozen sing-a-long, Toy Story Land, etc. That would be my choice. I loved AK, too, but I thought HS was more overall fun with a good mix of shows, characters, rides. Unless you really want to do FOP at AK and can get a fast pass! Or, if your child is really into animals.
EPCOT is my DD's favorite park. There really aren't any thrill rides except Test Track. Animal Kingdom is a great choice but be aware it's a gigantic park and requires a ton of walking. We generally avoid it in the summer. If you are trying to avoid thrill rides it really just leaves a few rides.

Do you have a park hopper? If so, I would try and do a half day at one park and a whole day at another, or even a half day at the other 3 parks, based on interests. We can do a half day at AK - our favorite is the safari. For EP, Living with the Land is our favorite "we need a break from walking" ride, and Soarin' is amazing - DD (age 8) and I try to get on it multiple times (depending on wait times). For HS, we love Toy Story Mania (a ride of midway/carnival-type games) and Slinky Dog Dash (although you may want to check out YouTube videos to see if it's too much of a "thrill" for you guys), the Indiana Jones show, and DH and DS like all the Star Wars stuff.
I guess if I had to pick one, I would say EP, as it's fun and relaxing to just walk around the World Showcase and try different foods. Plus you can go to the aquarium they have in the same building as the Nemo ride, which is right next to the "Land" building with Soarin' and Living with the Land.
We loved Epcot, but I thought it was the least "manageable" due to the distance between rides/amount of walking, and the split between the World Showcase and the other things. I think I would have found it frustrating to do in one day.
I'd skip Universal because it's so expensive to just go one day -- adding a 3rd day to your Disney passes would be easier.
As for park, I'd suggest Animal Kingdom or Epcot. With AK, you get the Safari, two rides in Avatar, lots of walking trails to see animals, great shows, and plenty of shade to sit and relax. I have a soft spot for Epcot because it's got the World Showcase for adults to enjoy (and the kids love it, too) but you also get the future part of the park where you can do rides like The Land, Figment, Soarin', and Test Track. My kids love all of them so it's hard for me to tell you what to pick, but if I had my mom tagging along I think I'd pick those two parks over Hollywood Studios. I personally LOVE HS, but there's not much shade and I find it harder to navigate in tough crowds.
