I am baking/buying for a coworker’s birthday on Thursday. I have yellow cake mix, but I don’t want to do a plain yellow cake. I also don’t want to go spend money on something fancy.
Does anyone have any recipes using yellow cake mix? I googled and found a cinnamon roll recipe, which I may end up doing, but wondered if anyone had any suggestions.
I'm from St. Louis, so gooey butter cake is about all a yellow cake mix is used for 😉 Mix cake mix with 2 eggs and a stick of butter and spread on bottom of 9x13 pan. It'll be thick.
Mix a box of powdered sugar, a stick of butter and a block of cream cheese with a mixer and poor on top.
Bake at 350 until top is a light golden brown.
Sure, it's a heart attack waiting to happen but it's worth it.
I would bake it in a sheet pan, let cool, slice lengthwise, add a layer of strawberry preserve filling, re-stack and cover in icing. Maybe decorate with candy.
Where I work, that would be a pretty fancy birthday cake.

If you look up White Almond wedding cake on Allrecipes and use vanilla instead of almond extract (has sour cream, extra flour, extra sugar) and pair with chocolate frosting, you won't be sorry. I like chocolate frosting with melted good quality chocolate chips instead of cocoa powder.
1 can of cherry pie filling 1 can of crushed pineapple 1 box of yellow cake mix 2 sticks of butter
Spread the cherry pie filling in a thin layer on a 9x13 pan, then spread the can of pineapple (don’t drain it) and spread it on top of the cherry. Then sprinkle the yellow cake mix on top. Finally, cut up the sticks of butter into little slices. Place them every inch or so on top of the yellow cake mix. Bake for 1 hour at 350. If doesn’t get any easier, cheaper, and it’s so damn good.

One of our managers makes something similar to this. She adds strawberries and uses a homemade whipped topping. So good!

When I do a preserve filling, I like a classic frosting like chocolate. Cool whip is lovely, but only if I can add it minutes before I serve it. I wouldn’t consider it work-friendly the way that frosting never fails.
I make a super easy, delicious, coconut cake with a yellow cake mix.
Do you have the recipe?
Bake a yellow cake mix by the directions in a 9" x 13" baking pan. As soon as it comes out of the oven poke holes all over the cake. Then pour 1 can of Coco Lopez Cream of Coconut over the cake. Then pour 1 can of Eagle Brand Condensed Milk. I let it sit on the counter for about 1 hour to let the milk soak into the cake. Then seal it up and put it in the fridge overnight. The next morning ice with 1 regular tub of Cool Whip and then pack on the coconut. I use a whole bag of Bakers Angel Flake Sweetened Coconut. It's soooo good and soooo easy! It is a hit everywhere I take it.
Store in the refrigerator.

Also from St Louis but I prefer GBC from scratch sooo my only use for a yellow cake mix is a rum bunt cake or a poppyseed bunt cake. I put a ton of poppyseeds in the second, as well as slow weed almonds and replace the liquid called for with butter and lemon juice.

My sister makes a really good crumb/coffee cake with boxed mix. Definitely not healthy but it's tasty and everyone asks her to make it for parties. She said she wings the recipe but she tried to guess at measurements:
Mix yellow cake according to box directions, spread in a pan, and bake for 20 minutes at 350 degrees; remove from oven.
Mix together the crumb topping in a separate bowl - 1 lb butter, 4 cups flour, 1.5 cups brown sugar, 4 TB cinnamon, 4 TB vanilla.
Top the cake with a generous amount of the crumb topping and bake for an additional 25 minutes.
