We are currently at WDW. Did MK yesterday and our boys (ages 6 and 3) did great! Today is a pool day. Tomorrow we do AK, Wednesday is Epcot, Thursday we are taking the morning/afternoon off and doing Mickey’s not so scary Halloween party. Friday we have no plans. We are considering doing Hollywood Studios. I don’t really know much about it. Worth it? My kids don’t love the scarier rides. We did splash mountain yesterday and they both survived but my 6 year old said it was terrible, haha.
He loves Star Wars. It looks like the simulator ride might be kind of scary for them. I read kids under 6 might find it too much.

If he loves Star Wars, I'd definitely go, especially to try to do Jedi Training or even just to watch it.
My 6-year old has loved the Star Wars ride for a few years and there is no chance he'd do Splash Mountain (although he did do Space Mountain). You could also attempt to see some of Galaxy's Edge, just to walk though it. And, my kids are obsessed with making light sabers, and that's fun too.
I'd go with just the idea that you don''t have to stay a long time, but just to check it out.

I just got back from a trip with my 6 and 3 year old. My oldest loves Toy Story Land and especially Toy Story Midway Mania. My 3 year old really liked the Alien Spinning Saucers. Slinky dog is so fun and I have to imagine a little less scary than Splash Mountain- my 3 year old rode it even if she didn’t love it.
Both kids rode the new Star Wars ride and were ok with it- but they were pilots (not sure how!) and got to do stuff during the ride like hit flashing buttons to help us fly.
Other things we like there are the Frozen sing along and Fantasmic. But it is definitely a half day park for us.
We went when DD had just turned 5 and did the Disney Jr. breakfast dine, then watched The Little Mermaid show, the Beauty & the Beast show, and the Frozen sing along. DS was only 9 months but I brought him along that day since we were just watching shows so not too much waiting in lines. We then got popcorn and Mickey Bars and we would have gone to look for Donald Duck, but DS turned inconsolably cranky and we had to head back to the hotel. We had Park Hoppers so DD and I headed to Animal Kingdom that evening.

I would encourage you to go, given that your 6 year old loves Star Wars. They do a stormtrooper march at various (scheduled) times throughout the day, and there is a Star Wars stage show (or at least there was the last time we went in December 2018) at various (scheduled) times through the day. I think it would also be fun to walk around Galaxy's Edge, even if you don't ride any rides.
Your kids might also really like Toy Story Land. We LOVE Toy Story Mania and Slinky Dog Dash (although you'd need to check height requirements for your 3 year old). Green Army Men walk around and interact with visitors. The Little Mermaid, Beauty & the Beast, and Frozen shows are also fun for little kids.
My five year old loved HS. Toy Story land is fun, the have a small Incredibles area, Frozen sing-along, Monsters Inc characters, Lightning McQueen racing. We spent a solid 7 hours there.
Dd really liked HS and I liked that it was a shorter day for us. The shows were great, especially the frozen singalong (if your boys like frozen at all!) and Indiana Jones.

We like HS but it's a lot of shows, so you have to be aware of start times and have a bit of a plan. We really love the Beauty & The Beast show, Disney Jr Dance Party (my kids more than me!), the new Cars show, the Little Mermaid show, the Frozen show, etc etc.
We LOVED HS. We did one long day there, from open to close, with my 10, 8, 6 and 4 year olds in March. Pre-Star Wars. We really enjoyed Star Tours (rode twice), Jedi Training, seeing the Star Wars march thingy, meeting Chewbacca, the Indiana Jones show, Frozen sing-along, Toy Story Mania (so fun!), Slinky Dog Dash, seeing Toy Story land in general. My kids liked the Star Wars fireworks but I missed most of that b/c I was off with my youngest and she was scared part of the time.
We didn't have time for the muppet thing (supposed to be very cute), no Star Wars was open yet, and we didn't make it into the Incredibles area, which sounded like it would be cute for kids to walk through.
There's a ton of character stuff you can do, too, if you want to do that. Lots of Disney Jr. characters, too.

Not anymore, but Stormtroopers roam Galaxy's Edge as do Chewie, Rey and Kylo Ren. You can also meet Darth Vader, BB-8 and Chewie at the Launch Bay. And there is the stage show.
Toy Story Land and Galaxy's Edge are phenomenal. There were young kids on Smuggler's Run both times I rode it that did fine. Star Tours is another slightly less scary option.
We recently did HS with my 5yo and 2.5yo and they loved it! Toy Story Land, Olaf, dis jr breakfast at Hollywood & Vine, watching jedi fighting were all highlights. Also the Incredibles stuff but that might be done now. We didn't even make it to any shows but there are several that I think my kids would have loved. We can't wait to go back and spend more time there next year.
We skipped HS on our trip last year and I think that was a mistake.
My daughter was 3,5,7 on our WDW trips. We went to HS every time and she always loved it. She doesn't do thrill rides, but loves shows and meeting characters. We always go rope drop 'till closing and never get done everything we want.
