We officially started 9/23 on our kitchen. The plan called for knocking down the load bearing wall, and completely changing the layout of the existing kitchen. Thus far they’ve taken the wall down, moved the hvac and water lines, removed the old windows, framed for the new window, put in new insulation, ran the electric and gas line, installed the majority of the new lights and wired for our in ceiling speakers.
Where the black double ovens were is the load bearing wall.

mrsukyankee, we've been waiting three years to do this! I love the room that's on the other side of the kitchen but unless we are entertaining 1-2 people, we rarely use it.
Take as many photos as you can once all the wiring and plumbing are in, before they drywall. You never know when you might need to refer to them.
We just had to pull up photos because we have a leak in the hot water line that runs in the kitchen foundation and we are having the original part of the house re-piped. We had photos of the bathroom too because we had an L shaped vanity removed and wiring/plumbing for the laundry done, so that was good. The photos were really helpful to the plumber for figuring out the least intrusive way to re-pipe and the cost.

TBM, we took pictures of the hvac and the water lines for that reason! Given we weren't really sure how they ran to the second floor before we opened it all up, we wanted to have those pictures for future reference.

I'm just annoyed that our contractor didn't suggest re-piping at the time, since their plumber did a fair amount of work replacing pipes in the wall at the time. It would have made sense to do it then, and probably would have been less expensive with the easy access. I didn't even know it was a thing that I should think about.

I hear you. I asked my contractor about installing more shut off points as we previously had no way to shut off the water unless we shut it off to the entire house. My H's co-workers took the old cabinets and they didn't check to make sure the water lines to the kitchen sink weren't leaking. Needless to say, I woke up the next morning to a bit of a mess.
I will say, while I don't like paying extra money, I appreciate my contractor bringing some stuff to our attention so we could easily upgrade it now. Given our house was built in 1971, they did some wonky stuff.
