Minute rice with butter and whole tomatoes (from a can) poured over it salted.
My mom used to make this and it always makes me happy and reminds me of her. I haven't had it in a long time because I try not to eat white rice, butter or salt. lol
Beyond the typical carby fatty stuff, to which I definitely do turn in times of need, my random comfort food is bagged iceberg salad mix with Wishbone red wine vinaigrette. No nutritional value whatsoever, but crunchy and tangy and I can get it or a semblance of it pretty much anywhere (in a store).
My mom made a bread pudding every time someone was sick in our family. I have no idea why! But it was her cure for everything.
The first time I saw bread pudding on a menu at a restaurant I was legit confused because I thought it was a universal "sick" food. LOL.
As for what I do for comfort food now, it's pull and peel twizzlers if I'm stressed (I like that they give my hands something to do), and plain buttered noodles if I'm sick.
my dad's homemade spaghetti sauce with corn added, served with rigatoni. I am not sure how or why I ever tried this combination, but it is my ultimate comfort food.
Now that my dad is gone, I really need to look to find the recipe so I can replicate it this summer.
Ground beef, rice, and corn all cooked together topped with ketchup. I ate this all the time growing up and made it for my husband once and he was like huh? Esp with the ketchup on top lol.
There used to be a baked bean brand called Big John’s Beans. My mom used to make it for me as a kid and mix in ground hamburger. It was so good and such a comfort.
I’ve since found a recipe that pretty closely replicates the sauce from that bean brand and it is still so delicious and total comfort food.
