We love grilling on nice summer nights but I’m getting sick of our staples. It’s either hot dogs/burgers, BBQ or flavored chicken, or we have two foil packets we make: a shrimp boil and a Mexican chicken thing.
I am open to other foil packets you like or something else entirely. I don’t like steak. Otherwise, I’m open to any kind of food.
Foil packs. We put shrimp, sausage, red potatoes, corn on the cob, old bay seasoning, garlic powder, and a little bit of butter. It’s the easiest, most delicious dinner.
There’s a skinnytaste recipe that’s called “Campfire Dinner Meatloaf” (sorry I don’t know how to link from my phone) but it’s good and easy and versatile.
Corn on the cob - clean the corn of its silk, spread butter on each cob, sprinkle with salt, pepper and garlic powder, roll up in foil, and grill for 25-30 min turning a quarter turn every 5 -10 min
Marinaded shrimp skewers - I usually cover the shrimp in a garlic/pesto marinade, then grill for 5 min tops
Marinaded pork tenderloin
Baked russett or sweet potatoes - brush the potatoes with melted butter, sprinkle the russett potatoes with kosher salt, pepper and garlic powder; or for sweet potatoes, sprinkle with cinnamon; wrap in foil. Grill the potatoes for 60-70 min turning a quarter turn every 15 min.
I cook pretty much everything I can either on my grill or my smoker in the warmer months, we don't have central AC so I avoid heating up the house at all costs. I also use my cast iron pans on the grill alot especially for things like softer fish or even veggies. Some of our staples:
Steak (we actually eat a lot of steak) Whole chicken (spatchcocked) Chicken thighs and breasts with peppers and onions for fajitias Cedar Plank Salmon Kabobs Pretty much all seafood I cook on the grill year round because my H doesn't like the smell Brats Bone-In Pork Chops Pork Loins Any and all veggies, I have a basket for them and it's great Baked Potatoes
In the summer I try to grill... everything. Other things we've done not mentioned here is pizza. We make the dough single serving/smaller so it's easier to handled. Grill the dough for a bit, flip, top, and finish off.
We also grill/smoke brisket, pork butt, and ribs. For veggies I'll grill it all as well. Smaller stuff goes in packets, larger things (like big sweet potato rounds) go right on the grate.
I'm a big fan of skewers as well. Pick a protein, some veggies, and season your own. Works well when not everyone agrees on what they want/the flavorings.

We use Lawrys teriyaki marinade on pineapple, red peppers, red onion, and steak/chicken. It's great on the grill.
I also just get a lot of fun seasonings from Penzey's (Arizona...Dreams? or something is my current favorite) and do whatever meat is on sale and produce in season (squash, sweet potatoes, peppers, onions, stone fruit).
We use the grill way more than the oven in the summer.

I have a basket that I put on the grill to cook veggies in. I also like to grill pizza. It's fun, and everyone can make their own and have their own toppings.
In addition to pizza- focaccia, pitas and other flatbresds are great on the grill. You can grill pretty much any bread, but it's a lot trickier with breads that need longer bake times (as grills aren't great at holding a steady temp).

I've always wanted to try grilling pizza but wasn't sure how to go about it without a pizza oven thing. So just throw the dough right on the grill for a bit?
Grilled peaches are amazing too. Cut in half, remove the pit, grill until it starts to char a bit. Top with melted butter and brown sugar and walnuts. So good.
Grilled cabbage is good too.
We do a lot of salmon, steaks and burgers. There are some great ideas on here!
In addition to pineapple, grilled bell peppers are fantastic. Cut them into quarters or halves (slice off the tops/bottoms so you can flatten them), toss with olive oil, salt and pepper, and grill 'em.
Also, corn is great on the grill. Get the stuff still in the husk and soak it in the sink first so it doesn't catch fire and the kernels get steamed as it cooks.
Burgers - regular hamburgers, veggie burgers, and this salsa verde turkey burger (use more bread crumbs, it's very wet with the salsa and wants to fall apart). I want to try my hand at scratch made black bean burgers this year.
Sausages - we don't really eat hot dogs, but we buy brats sometimes, or flavored chicken sausages from costco
Kabobs: Lamb kefta kebabs - I sauté the onions first, because I think they are too crunchy otherwise Moroccan chicken Chunks of chicken or steak with onions and bell peppers
Teriyaki marinated flank steak or tequila lime marinated tri-tip.
Assorted grilled chicken: Lemon butter chicken my H makes. I'm not sure all what it is involved, except a ton of lemon juice, butter, and garlic, and a smidge of hot sauce. It's something his family made up, but it's really good on fish too (we stick to halibut on the grill because it holds up better than cod and I hate salmon.
Chili Lime Chicken - this is good for tacos, or for a taco salad Chinese 5 spice chicken - I'd have to look up what I used, but I basically just mixed up a bunch of a spices and oils for some grilled chicken to put on the Asian cashew salad from Costco to make it more hearty. It was really good.
Tex Mex Foil Packet - we actually did this in the oven because the weather turned on us, but it's supposed to be for the gril.
Pears Peaches Apricots Pineapple (For the above ones, even canned works well) Apples
Once the mains are done, I load the grill up with all the fruit. Amazing plain, or with ice cream, or I always have extras to eat with Greek yogurt for breakfast.

I bought ahi tuna steaks at Sam's and I love them grilled. We have a lemon pepper seasoning that we use on a lot of our chicken and fish and it is delish.

We’ve tried this. Do not recommend. I don’t know how people do it without a griddle!
I make an olive oil dough (which probably helps a little) and we toss it right on the grill to parbake. I definitely make a thicker crust than when I bake it in the oven (which makes it so effortless). You can use a cast-iron griddle in there, though- cast iron is fantastic for pizza, I actually prefer it to any pizza stone I've ever used! I don't think there's any standard for how far apart grill bars are, and of course pizza doughs vary- so that's a nice way way to hedge one's bets, if you're worried at all.
