Long story of why, but I just got confirmation that my family of 8 adults (plus my two littles, who are both under 3.5yrs) are coming to my home for Christmas lunch. We usually have turkey, but all the turkey breasts are sold out around our area. So now I'm in a bit of a jam and can't figure out what to serve.
My aunt only eats turkey, chicken and seafood (which is why we usually have turkey on holidays). The rest of us eat everything but ham.
Other ideas for main dish or protein that are fairly simple? Bonus points for recipes!
I've always eaten Italian on Christmas, so would recommend that. Lasagna, eggplant, riggies, meatballs, something like that and a large salad.

Does anybody have a tried and true scalloped potato recipe? We’ve tried a few over the years and I’m underwhelmed, although one is a family recipe from my ILs so I’ll have resistance to try something new.
This is a favorite with my whole family, in laws, etc. SO GOOD!
2.5 cups whipping cream 3/4 cup minced shallots 2t chopped fresh rosemary 2t salt 3/4t pepper 4lbs peeled russet potatoes, sliced 1/4” thin or less 2 cups grated sharp white cheddar
Heat oven to 375. Butter a deep square baking dish. Whisk together cream through pepper. Layer half your sliced potatoes in the prepared dish, sprinkle with half of cheese. Layer remainder of potatoes on top. Pour liquid mixture over potatoes, and sprinkle remaining cheese on top. Bake for 1 hour covered tightly with foil, and then uncover and bake for an additional 45 minutes.

I made this last year on Thanksgiving, and I'm planning on it for Christmas this year. It was SO good.

DH and I started doing breakfast burritos years ago. I don't know why. But now we let our kids have deconstructed ones. We usually have chorizo, but get something with less spice for the littles.

I usually make these lasagnas for Christmas, I use these recipes (ground turkey for the ones with meat):
I didn’t blind-bake the shells, so I had to push a little well into them halfway through the baking time and as a result the wells are uneven. Not a big deal, but not as pretty, and inconsistent to fill. I plan to make them again and do a chocolate caramel version, and I bought lemon curd and I will top with fresh whipped cream (or maybe meringue, since MH was hinting about a kitchen torch gift for Christmas).

honestly, in this situation I would probably just roast a couple of large chickens. There are lots of great recipes out there that make chicken just as festive as turkey. My favorite way to do it is to spatchcock the bird and then marinate in miso, ginger, and garlic for a day. It gives the meat SO much flavor and it always stays juicy. Good luck! 8 people on short notice is a lot.
The miso ginger garlic marinade sounds amazing, is there a recipe?
honestly, in this situation I would probably just roast a couple of large chickens. There are lots of great recipes out there that make chicken just as festive as turkey. My favorite way to do it is to spatchcock the bird and then marinate in miso, ginger, and garlic for a day. It gives the meat SO much flavor and it always stays juicy. Good luck! 8 people on short notice is a lot.

2 Tbs Garlic (I double this) 2 Tbs Fresh Ginger (I use a zester and keep my ginger in the freezer so it's easier to grate) 1/4 Cup Miso Paste (I prefer red miso, but white miso works too) 2 Tbs Olive Oil 1/4 Cup Unseasoned Rice Vinegar (if you use seasoned, you probably won't need the sugar) 1/4 Cup Soy Sauce 1/2 Tbs Brown Sugar
Whisk all ingredients together, taste, and adjust seasoning if needed. (Sometimes I want more sugar... sometimes I want more miso 🤷♀️)
This makes enough to marinate a 4-6 pound chicken. I spatchcock the chicken and use a 2 gallon ziplock to marinate it in the fridge for at least 24 hours (although even an hour in the marinade gives it great flavor).
I like roasting at high heat, so I stick it in the oven for 40-60 minutes (depending on how big the bird is) at 425°F. If the skin starts to brown too much I just tent it with foil until it's done.

I'm bummed. Our local butcher (in our farmer's market) lost our order and so we aren't going to be having the duck we were hoping to have. They had an extra rolled turkey crown with bacon that I purchased from them so we'll have a dinner, but it's still annoying to have to make changes to the plan. (Turkey is traditionally what people eat for Christmas in England)
Now have to figure out new side dishes. Looking at what all of you are posting, so thank you for doing that!
H and I are hosting my parents, grandma & oldest sister for Christmas Eve dinner & Christmas Day lunch. Our tradition for Christmas Eve dinner is stroganoff. We went back & forth on the Christmas day lunch and finally decided on honey garlic meatballs, asparagus, mashed potatoes & garlic bread. My sister is bringing dessert. Christmas breakfast will be just my little 3 person family. We always have egg casserole, cinnamon rolls (from a locally owned berry patch) and coffee. Yum.

I'm trying to decide if I want to make lefse. I really want it, but I'm the only one who eats it and it's a lot of work.
My DH's family looked at it like it was the weirdest thing they'd ever seen when I brought it a few years back and I hold food-related grudges so they don't get my lefse anymore.
