I have a set of old kids washcloths and cotton rags I keep for kitchen use for cleaning kitchen spills, counters, etc. For the rest of the house, we have a separate rag pile - mostly old t-shirts, towels and holey socks (all cotton items). They work really well and we never have streaking problems.
Between those and our cloth napkins, we go through maybe one roll of paper towels a year. The thing that still gets me is greasing a baking pan - I still use a paper towel for that, so if anyone has any alternatives, I’m all ears.
I use a tissue to grease pans - not much better but makes me feel better because it seems like less paper - at least that’s what I tell myself

Why can’t you use cloth to grease a baking pan? If you don’t want to use cloth why not use a basting type brush?

I bought some Norwex towels off amazon, I love the snot out of them. I know they're an MLM but those towels are better than all my other towels of similar material. I wish I knew why b/c they're more expensive than I'd like them to be.

Oh and I save butter wrappers and use those to grease pans. If I don't have any then I just use my hand, I'm not sure if this would be considered gross ¯\_(ツ)_/¯ .
I use ordinary white square hand clothes to wipe counters, any messes, and the floors. I use paper towels as a back-up (mostly for raw meat prep and fish clean up). Then I hang dry them and aggressive wash them in the washing machine. I intermittently use bleach and oxy wash to keep them white (no fabric softener). And recently, I used the blue cleaner (dye) to really get them white.

If she’s anything like me - the reason I don’t use cloth is it’s a pain to get the butter out with my regular washing.
And I use butter from a tub to grease my pans usually - so I use a basting brush if I’m using oil but if I’m using butter I need something to scoop it out of the tub with and mush it all around in the bottom of the pan.

I totally agree that not all microfiber clothes are equal. I also started with Norwex and after 5 years or so I needed to replace them. I started following a youtuber that came out with her own cloths and I think they're very comparable! www.makersclean.com/collections/cleaning-cloth-collection

Maybe you could tear a little piece of parchment paper and use that?

I also use my hands when I'm rolling dough or making cookies etc, I'm not sure how that's any different.

Are you saying this cause of germs? Don’t most people roll out dough and stuff with their hands too? Same with chopping stuff up, etc.

I have no idea. It’s completely irrational. But it has never occurred to me until today that people were scooping and smearing the butter with their bare hands and somehow it has me squeamish.

I don't use paper towels for cleaning. I should say it is for environmental reasons, but really it's because I like Viva paper towels and those are too spendy for me to want to use for cleaning.
I use old wash cloths, old towels, old kitchen towels, etc. for most things. And then old undershirts for glass cleaning (torn up into smaller pieces, not a huge shirt on the mirror).
I also use the green cloths from that set for dusting/furniture. Otherwise we use cut up old tshirts or a set of gray washclothes we bought to use as napkins for the kids.
I use paper towels for the toilet seat and for catching the grease from cooked bacon, and that's about it.
