I've always had to remove the SSC on take off and landing. I'm not quite sure the safety issue around it, as it seems like it would be safer for the kid to be strapped to me, but I complied!
Right? I'm sure there are legit safety reasons, but my kid LOVED to be worn, the tighter the better. You want us all to sit safely without screeching and flailing? Strapping him to my chest is the way to get that done.
Ditto lollipops. Good for take offs and landings, were a "special treat" in our house at baseline (because they are sticky, rarely finished, and take forever to eat). Take some for the flight each way.
Ziplock bags, large and small. To this day (kids ages 12 and 15) I keep a bag of bags with me on flights. So many uses.
Extra clothes for everyone
unlimited iPad shows/movies and headphones
Snacks. So many snacks.
Wipes - Clorox and diaper
If something happens, remember that like others have said, there is a fixed time limit for the flight. It will end, you will get there. I flew alone with a 3 year old and nursing 8 month old who decided she wasn't going to eat, just scream for the whole flight. No bottles (because she'd never take one for me, so I didn't even try to have one with me), both boobs were fully on display with a thrashing kid in my lap for 2 hours. Super fun. But we landed!

In addition to all of the above, just remember it will end. The plane will land and you will get off the plane in one piece. No matter what happens, it is time limited.
I’m bumping this because we are flying again soon, and I think others with toddlers are taking flights as well.
I purchased the headphones EmilyinChile posted above, but I’m still not sure if she’ll wear them or not.
I put it in a Randoms but I just booked a trip last minute and only an aisle and window seat in 2 separate rows available so that’s what we’re gonna deal with with a lap infant haha. It’s a little over 3 hour flight so just gonna make the most of it and apologize to people sitting next to us. I think me and my partner will take 1.5 hours each. Hopefully she’ll breastfeed some and then Lots of books and snacks is my plan! She hasn’t reached the stage of watching tv yet, whomp whomp.

The hardest part is making sure they don’t kick the seat in front of you!
I’m glad she has to have a seat now, so I bought the Cosco Scenara and hopefully have it facing the back (but that will prevent the person in front from reclining and heaven forbid…). She sort of watches TV, but we have an old Kinle Kids Fire with Sago games on it, so maybe the newness of pushing buttons will be a hit.
Also, I will say that the best thing we brought last trip was stuffing magic scarves into an old wipes container so she could pull them out over and over again (same idea as the Puff container someone posted above). She still plays with it!
A backpack full of brand new toys and games. Nothing that makes noise. Open all packages and repack in plastic (or reusable) bags at home so you dont have to deal with trash on the flight and can conserve space/weight. And as many snacks as you can fit. The snacks were what saved us from a meltdown when it took an hour to get our rental car on our last trip.

We had one adult board with the bags, and one adult walk the toddler around the gate area and be the last ones to board, to tire him out as much as possible and to shorten the time he was cooped up.
We wrapped individual snacks and toys. By individual snacks I mean like every cracker. That used up time as he unwrapped each thing and then ate or played with it.
Check what kind of plane it is, but when you get to the airport, see if they can put you in the front row/bulkhead. There should be enough room for her to stand and walk around. A lot of airlines block that row until day of, so you could call the day before to see if it is available. If it is, try to get to the airport early and ask for it.
