Either leftovers from dinner the previous night or a sandwich, veggie & fruit.
Sometimes I'll make a cauliflower salad with whatever meat & veggies I have on hand and cheese mixed together with plain yogurt. It's filling, healthy and delicious.
I always pack a Greek salad with various versions of - dolma, feta, roasted red pepper, hard boiled egg over my regular staples of grape tomato, cucumber, shredded carrot, and red onion with chopped Romaine lettuce.
If I don’t have much to top my regular staple of salad, I make & also pack a 1/2 sandwich of ham & cheese, turkey & cheese, or tuna.
I also pack a late morning breakfast of 1/2 cup 0% Greek yogurt + frozen blueberries. If it’s a particularly long day, I’ll also pack an apple, banana, or small bag of chips.
When I feel fancy and have the leftovers, I’ll make a small quesadillas with chicken or have dinner for lunch.
I take long hikes during lunchtime so my lunch is mainly a series of snacks. It's typically a huge serving of mixed berries (probably 2 cups total, mostly blackberries), nuts, Alyssa's vegan bites, coconut chunks, and Quest protein chips (Loaded Taco is my favorite). I'm more of a snacker during the day and like a hearty meal at night.
I typically try to meal prep for 3-4 lunches and eat out the rest of the time. For the last few weeks I’ve been on a kick of doing prosciutto Caprese sandwiches on ciabatta rolls (prosciutto, fresh mozz, sliced tomato, basil on a toasted ciabatta roll). Then I just pack a ton of sliced fruits and veggies. It’s been nice as it starts to get warmer.
I’m also a huge fan of the Raos frozen eggplant parm at Costco. It’s two trays of 5 servings each, so one tray is enough for dinner and still have enough for a few lunches.

I make 5 salads every Sunday. I almost always eat them at lunch but if we are running around and need a quick dinner, I'll eat one then.
I buy the packaged rotisserie chicken from Costco, and freeze in individual chopped portions. In the morning I'll grab one of those (thaws by lunch time), and add avocado to my salad before I leave. I have dressings at school.
Tomorrow- leftover Chinese food Tuesday- buffalo chicken sandwiches on Hawaiian rolls Wed/Thurs I’m in office- I bought pre-made salads from the store Friday- buffalo chicken sandwiches
I like to buy the Costco quiche 2 packs and bake one on a WFH day and then portion for breakfast or lunch
I’m so boring! It’s always either leftovers with a caffeinated diet soda and a yogurt carton or two cheese sticks, a granola bar, and the same can of soda and yogurt.

I made sweet potato tacos, with black beans, caramelized onions, avocado, fresh salsa. I’ll just eat that all 5 days this week.
DH will have either a wrap or tuna on rice cakes. I swear, it’s not that boring! lol he likes it and I make a yummy tuna salad. He also has this tomato basil rice cake he loves for this.

I will usually eat a combo of two of these things for late breakfast / early lunch / snacks during the day:
- chickpeas and salad with buffalo sauce and a Mission carb balance wrap - protein shake - plain Greek yogurt with berries, pumpkin seeds, chia seeds and a little bit of honey - Ezekiel toast with peanut butter and blueberries - Ezekiel toast with avocado - hummus and crackers with red pepper slices, turkey jerky, and pistachios on the side - air fryer bananas and apples with cinnamon on top of Greek yogurt, pumpkin seeds, and chia seeds - roasted chickpeas, sliced peppers, and turkey jerky - sweet potatoes with black beans, tomatoes and curry yogurt sauce (not frequently as I like fast and easy, but it’s tasty and filling)
I've been on a turkey sandwich kick. Sourdough toast, romaine lettuce, spicy mayo (I mix Calabrian chili paste with mayo), honey roasted turkey and Munster cheese.

A variation of this salad- rumblytumbly.com/2016/04/26/chrissy-teigens-chinese-chicken-salad/ Burrito bowls/salad (usually with leftover taco meat, grilled chicken etc) Quesadillas (also with leftovers) Snack "lunchable" type plate... some kind of lunchmeat, cheese, pickles, olives, a hb egg, veggies/hummus, crackers, fruit etc. Italian "sub" salad. A bunch of chopped up lunchmeat, cheese, pepperoncini, veggies, garbanzo beans, olives over chopped romaine. Dressing- 1T mayo, 1-2T red wine vinegar, drizzle olive oil, S&P and some Italian seasoning Anytime I make soup or chili I'll freeze some in small individual containers for lunches.

A low carb tortilla wrap with hummus, turkey, cheese, and whatever veggies sound good. I really pack in the turkey, so it's high protein for me. Maybe some crackers or chips, depends on how hungry I am.

Typically: romaine or spring mix, diced peppers and red onion, chopped cucumbers, chick peas, and grape tomatoes. Sometimes I'll do a kale / broccoli slaw mix which also stays fresh for 4-5 days.

There is one that comes with a poppy dressing -- I can get them at Kroger and Costco. I actually really don't like the dressing but otherwise it's delish.
ETA: Costco sells a pre-made but deconstructed spinach salad that also works really well!
Thanks for the ideas everyone! I eat at home every day for lunch. I try to come up with new ideas from time to time, but I seem to eat the same 10 things. (some of them are different than dinner, I promise!)
I eat lunches a week at a time. This week it’s a good ol’ fashioned deli turkey, Swiss cheese, and spinach sandwich, a cup of roasted broccoli, and a cup of strawberries.
I made a few big batches of pasta salad so I am finishing that up. I never plan ahead for lunch so it's usually stuffing some lunch meat in my face at my desk (I wfh).
