We have two Subarus: a 96 Outback with 140k miles, and a 2010 Outback with 42k miles. Both are wonderful cars, and I don't expect to ever own another brand. Thus, add me to camp Subaru!
We have a Subaru Legacy and love it. My dream car is the Outback. HOWEVER my DH made a huge spreadsheet with a weighted points system based on price, gas mileage, cargo space (we also have a dog), and other features, and the Maxda CX-5 won. The Subaru Forester ranked top five. Outback didn't rank in the top 5.

That...is awesome. Neither one of us would ever have the attention span for that.

Oh - I don't think OP is considering the Forester, but in case anyone else is, I want to bring up that we test drove both the Forester and the Outback. We liked the style of both and the features are similar, but the Forester drove more like an SUV, whereas the Outback drives just like a sedan. There is virtually no difference in feel between driving the Outback and the Legacy. That's what made the Outback our top choice.
I used to have a subaru and loved it! I don't know if mazda has improved, but the people I know who have owned them (and it's been a while now) had serious problems with theirs starting at like 50K miles where subarus go 250-300K easily. I would not buy a mazda because of that reputation. I also know a few mechanics who all say to stay away from mazda.
I have never heard from anyone that Mazda has a reputation for being unreliable. In fact, they get very high marks for reliability from Consumer Reports.
In my family, we have had 4 Mazda vehicles that were driven over 150,000 miles each before they got traded in. My current Mazda only has 43,000 miles, but it's a 2010.
Anyway, both of the Mazda cars I've owned (a 1996 and a 2010) had no reliability issues at all. Just routine maintenance.
We have two Subarus right now, an Outback and a Legacy, and we love them both. I drove a Mazda 626 sedan for about 10 years before getting the Outback, and I liked it just fine too. I've never driven any Mazda SUV or crossover. The main reason we went with Subaru this time was for the all-wheel drive.
ETA: Definitely definitely get the leather seats. So much easier to clean pawprints and vacuum up the fur.
LOVE my '10 Subaru legacy. HATE that I didn't get leather seats. Water even stains the beige cloth upholstery even with scotch guard.
I have a Subaru Outback (2012) and I love it. It's easier for me to drive than a car, feels really stable and save, and surprisingly has a ton of room inside. We have 2 rear-facing convertible seats and my 6'3" husband is still able to comfortably drive it.
