We are Sunday laundry people. We usually watch football all day after church, so it's easy to do laundry on Sundays. We are not, however, good about putting the folded clothes away... this is something I need to work on. Laundry is my least favorite household chore. I'd rather scrub the toilets. I think it's just because laundry is an all-day task.
I'm no help - I do one or two loads a day. I don't like to let it pile up because then it's overwhelming. Folding one load of laundry? Not a problem - it takes <10 minutes. Folding a whole week's worth? OMG. I can't even.
This is what I do to. First thing I do in the morning is take all the pajamas, towels and clothes from the day before and throw them in the wash. By the time the kids are at school, the load is in the dryer and it's folded and put away before noon.
The only time I don't do this is weekends and then on Monday's I end up doing 3 days worth which is about 2 loads. On Friday's I do bedsheets.

I do laundry every Sunday. We do not have kids yet, so this could well change once we have little ones. As soon as I wake up on Sun am, I throw in a load of darks, than lights, followed by sheets/towels. While the clothes are in the wash, we clean our house. I'm pretty OCD about cleanliness and luckily SO is too, so we are very regimented about cleaning/laundry:)

I can't do laundry on just one day because a) I don't have a lot of clothes that fit and b) the baby creates so much laundry I would probably get smothered with all the dirty burp cloths if I didn't do it more often. I usually end up doing one load or so every night (so start it in the morning, switch it over if I come home for lunch or do as soon as I get home from work, fold it before bed or just stash it in a basket until I have time to fold it). I do the bulk of my laundry on Wednesdays and Saturdays, though.
I should do small loads during the week but in reality I end up doing 3-4 loads over the weekend. I really wish I could train myself to do smaller loads that are less overwhelming!
