Nursing - I still use Total Baby to track nursing. I'm terrible at stopping the timer, so it's just for me to remember left vs right. After pumping both sides at work, I can't always feel which one is next.
I had an Itzbeen with DD and I loved that thing. She was pretty well scheduled on the 2-3-4 schedule so I liked knowing how much time had elapsed since the last feeding and nap. I probably finally put it away when she was 10 months? 11 months?
With DS, in typical second child fashion, I haven't tracked a thing since maybe 6 weeks.
We've been trying to track sleep and feeds for a week in preparation for sleep training. 1am-5am is a black hole because we're so exhausted we're literally doing everything in our sleep. My kids still nurse at night, but I don't know what time or for how long, so I'm really nervous about trying to wean those feedings.
To night wean my first I had to wear several layers of non-BFing friendly clothing to avoid nursing in my sleep.
I still keep track of DD's eating because I like to make sure she's nursing/eating enough. Just what time I nurse, how long (in 5 minute increments) and which side.
The only output I've ever tracked is poops as she started solids making sure it wasn't too long between.
Three days I think? It was pretty clear lu was gaining weight and having no probs. I just felt my boobs to see which one I had used last.
I seriously can't imagine tracking all of that stuff, even in an app!
Haha I can't imagine not tracking. We obviously won't do it forever but it has been very helpful to us in figuring out why he is cranky, why he slept well or poorly, etc.
It's also been handy for his tear duct problems & discussions with his doctor. It was so simple to pull up the info & say he had infections X times in the last 2 months.

we tracked for 2 weeks with the twins - which was how long I took pain meds (i tracked pain meds) so figured we might as well track bottles/poops/pee if we were still tracking my pain meds (which was most important b/c i could never remember if i had them)..... feeding the babies was never a worry - we always knew, they let us know- every 3 hours like clockwork... and pee/poop wasn't an issue.
