I am trying to think ahead of what to serve for dinnerat our party. Last year I had fajitas, empanadas, and tacos along with sides of a mexican rice dish and blackbeans/corn salad. Any input on other things to serve? I want them to be easy things so I can enjoy the party along with my guests instead of being busy in teh kitchen. We will have anywhere from 20 to 30 guests.
They are AWESOME...you could do the whole thing ahead and just do the broiling step at the party to both heat it up and crisp it up. I did Mexican rice (www.annies-eats.com/2009/03/09/mexican-rice/) and refried beans (ellysaysopa.com/2010/01/17/mashed-pinto-beans-with-bacon-and-manchego-refried-beans/) as the sides. The refried beans reheat well...the rice would probably do better day-of, but you could prep everything ahead of time. Diced onion, crumbled queso fresco, lime wedges, cilantro, and salsa verde for dressing the carnitas (in corn tortillas, of course!). Guac and chips as an appetizer (guac would have to be made that day, but it's easy).
For our Cinco de Mayo party last year we had a nacho bar with Churro Cupcakes. The meat and queso kept warm in crockpots and everything else was prepared ahead of time.
