This was my 2008 Christmas Menu for 40 people (my family and his family). Also, everything had to be dairy-free, so I was making a lot of substitutions.

bourbon sweet potatoes
2 lg cans of sweet potatoes brwn sugar 1 stick of butter bourbon marshmallows (optional)
preheat the oven to 375 spray a large casserole dish w/ cooking spray dump one lg can of sweet potatoes (drained) into dish sprinkle brwn sugar on top litter w/ pads of butter drizzle w/ bourbon repeat w/ 2nd can top w/ marshmallows and bake until heated through and marshmallows are toasted ~ 25-30 mins
I'm so jealous of this entire thread. We're going to my mother's for xmas...she's gluten free AND dairy free AND has the palate of a 3-year old. I don't know wtf we're going to eat.
This is awesome during the holidays. Broccoli Casserole
2 eggs or egg whites 2 green onions, chopped 1 can celery soup or make your own 1 cup mayonnaise 2 boxes frozen broccoli 8oz. Monterey jack cheese (1 bag of the pre-shredded bag) 4 oz of pepper jack cheese (more or less, depending your taste) 1 cube butter 1 stack Ritz crackers
Mix in bowl: beaten eggs, chopped onions, celery soup, and mayonnaise. Chop off bad part of stalk and partially boil broccoli. Drain. Pour mixture and broccoli into casserole pan. Grate cheese on casserole. Crush Ritz stack and combine with melted butter. Sprinkle Ritz mixture evenly over top of casserole. Bake 350° for 30 minutes.
Buy a bag of the small stick pretzels (not the rods) Put them in a large bowl (or something where they'll fit) Pour a little vegetable or olive oil on them, not enough to soak them, but enough so you can mix it all together Add one packet of Hidden Valley Ranch DRY packet seasoning Mix everything together Put the pretzels in a baking pan (overlapping is fine) Put them in the oven on 250 for 10 minutes (to dry the oil) then eat them! (after they cool off And BOOM best snack ever
I just made this apple tart yesterday, and I may make it for Thanksgiving or Christmas. Undecided as of yet, but it's amazing and very easy to make (and could be even easier if you go galette-style). Same goes for these apple crisp muffins. Maybe breakfast for Thanksgiving because I'll be cooking my ass off. They make an excellent brunch food.
This year, I'll be using Alton Brown's method again for turkey. It has made the best turkey I've ever had two years in a row, so I'm going to stick with it. I always make pumpkin pie and candied yams, and I will probably always make this vegetable and herb dressing. Words cannot describe. It's my favorite leftover besides dessert. Pioneer Woman's mashed potatoes are outstanding, so I'll probably make those again. Same goes for this double chocolate pecan pie. I'm a creature of habit with Thanksgiving. I may make this harvest apple and spinach salad.
And just because I really want pumpkin pie now.
I don't know what we're doing for Christmas food yet.

I've decided on our T-day signature drink at least - crockpot full of spiced apple cider, with an assortment of add-ins. (bourbon, rum, apple brandy, peach schnapps, cinnamon liquor, caramel vodka...)

Ok, I just had a slice of the cranberry bread I made yesterday and it.is.AWESOME. So I shall share the recipe. Which I totally didn't completely follow, so my notes are in parentheses.
2 cups all purpose flour
2 cups fresh cranberries
zest of one orange (I didn't have any)
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
4 ounces butter, melted (I used half butter, half non-fat plain greek yogurt)
1 egg (when I doubled the recipe I forgot to double the egg. and then I added milk)
3/4 cup granulated sugar (I used half sugar, half honey)
1/2 cup roughly chopped walnuts (I forgot these)
Instructions
1.Preheat oven to 350.
2.Mix together the flour, baking powder, baking soda, salt, orange zest, walnuts and cranberries in a large bowl.
3.In a smaller bowl, whisk together the melted butter, granulated sugar and egg. Pour wet ingredients in with the dry ingredients and mix to combine. Note that the dough will be on the dry side and almost resemble sugar cookie dough.
4.Press the dough into a greased loaf pan and bake for about an hour to an hour and fifteen minutes. The top of the loaf will be a rich golden brown. Let cool before slicing.

Oh man I'm going to share this with H. He loves spiced cider with "add-ins" LOL.
Also signing in to say that I am still bitter about not hosting a holiday but my parents are going to spend Christmas eve with us so I'm going all out for that, so that kind of eases my pain a bit haha.
The spiced roasted acorn squash rings is an adaptation of this recipe: Spiced Roasted Squash
I'll halve two medium acorn squash lengthwise (through the stem and the pointy bottom), scrape out the seeds, and slice into 1/2-inch thick slices, and rub the oil and the spice mixture from the recipe onto them, place on a foil-lined baking sheet and roast at 475 for 12 minutes, flip, and roast another 12 minutes.
