Pot roast, not sure what preparation yet. But they're BOGO this week so I'll make one and freeze one.
DH will be at a meeting this Thursday, we usually order pizza on Fridays, and we have plans for dinner out on Saturday, so I don't need that many nights of meals. And the pot roast will definitely have leftovers in case we need lunches or one more dinner.
bake for 30ish min at about 375. so great! i've prepped in advance before and it keeps for a few days in the fridge so all i have to do is pop it in the oven =)
eta: it makes 6 regular servings or 4 hefty servings. i use the casserole dish that's not the standard 9 by 12'er.
Sunday: roasted chicken, cranberry, roasted squash Monday: BBQ pork, salad Tuesday: kitchen-sink soup (DH just puts any kind of meat we have around, veg, and usually some little potatoes in a broth he made the week before... This is a weekly meal) Wednesday: lamb curry with peppers and pumpkin Thursday: short ribs and mashed parsnips / cauliflower Friday: take out Saturday: chicken and peppers, salad
