Occasionally I can make some pretty good hummus. Sometimes, though, it ends up kind of dry. When that's the case, I've tried adding more oil and/or tahini, but it just doesn't seem to fix it.
Does anyone have a recipe for nice, creamy hummus? I had a recipe once that called for yogurt instead of tahini, and I'll have to see if I can dig that up, too, as I never got around to trying it. I have a feeling that would make it really creamy if it ends up tasting the same.
I had been able to buy good hummus from the store, but at our new grocery store I haven't been able to find any fresh hummus, so it's time to get a good, reliable recipe.

I live in the land of amazing hummus, so sadly I don't have a good recipe since it's far easy to get around here. I need to change that though - it will be useful if we return to the US someday!
I love this website, and her method intrigues me....if you have some time, this one is worth a try!

Those pictures look so much like my ideal hummus that it may be worth the effort to try, thanks! Maybe I can recruit DD1 as slave labor to help me pop the skins off...

I control the creaminess with the chickpea liquid from the can. If you don't use canned, I'm sure you can use the water from the chickpeas.
I do use canned, but the recipe I had been using said to throw out the liquid. Ok, new thing to try before peeling the chickpeas Although the peeled chickpea hummus pictures looked creamier than this website's...

I do always remove the skins now. DD has a thing about finding skins in her hummus.
I also use lemon juice in my hummus, do you? I blend the lemon juice and tahini first, before adding the chick peas, salt, garlic, cumin & olive oil. A recipe I used told me this improves texture. Worth trying.
I've never removed the skins, but I do reserve the liquid from canned chickpeas to use (instead of oil usually). I think the secret is just having a really good blender.
