I probably should have stopped and froze the rest of the batter but I was on the phone and just kept going. Has anyone ever frozen pancakes and thawed them with success?
1) There is no such thing as too many pancakes. That's like having too much money. In fact, I wish pancakes could be used as money.
2) Yes. I use parchment paper (I'm sure aluminum foil would work just as well.) and stick a piece just a little bigger than each pancake. Then I wrap the whole stack in cling wrap. And, then, because I aspire to be a neat and tidy person, put them in a ziploc bag. They travel well, if you eat brekkie at work (like I do. I know you don't. But if you did.)
Well, for future reference, I always make extra pancakes to free for DD to take out as an easy breakfast. You can separate them with parchment paper, but I usually just put them in a ziploc bag and throw them in the freezer.

I never freeze them, because i usually only have a few leftover. I just put the extras in the fridge in a plastic container and reheat them in the toaster, for a quick and easy breakfast for Beckett for the next couple days afterwards. That kid would eat pancakes for every meal if I'd let him.
I'm thinking pancakes might be a good way to sneak healthy stuff into a kid, like oatmeal and flax seed and of course fruit, as long as you cover them in syrup or slather on peanut butter (my personal fav) and that when she gets older I might start to make batches just to freeze and refrigerate.
