And its not really working I just made a batch of strawberry jam. My house smells heavenly, and I have 8 jars of jam! However I also have about 1/2 cup that I didn't want to waste a jar on because there wasn't quite enough for a whole jar and its warm and delicious and I have saltines that are calling its name and mine (insert blushy face here).
I've been making low-sugar jam lately (it's a slightly different pectin, and uses about half the sugar of regular pectin, but cans up the same).
Makes me feel less guilty about doing something similar with that leftover bit that doesn't fit in a jar. I also have some of those teeny half pint jars, too, so when I have leftover jam it really isn't much.
The jam is mostly for DH. He's really big into PB&J sandwiches. Has 'em all the time.

I've never done the less sugar versions, but I think I might try that next time!
There are recipes for reduced sugar, and for sugar-free. I didn't want to use splenda (and the strawberries were not sweet enough to make jam without some form of sweetener), so I went for reduced sugar.
Tastes fine. DH doesn't know that they are reduced sugar...
