I should say I want to try one we haven't been to before - which obviously you don't all know, so we'll see if someone has a favorite we haven't tried...

H and I tend to pick our restaurants by the quality of their draft list, so I don't have a ton of fancy reqs.
But these are a few of my favorites in the last year: Eva - in the Tangletown area Ponti Seafood Grill - Fremont Stumbling Goat Bistro - Phinney Ridge/Greenwood
It used to be Purple for me, but I wasn't wowed the last two times I was there In fact, they didn't even serve me the crackers! I *live* for their crackers!
I don't even know "fancy" in Seattle much, and since we don't do seafood, that really limits. But I'm going to watch for new ideas..

I'm totally following this list. Our 1 year anniversary is next weekend (already!!!) and I told H I wanted to go to a restaurant in Seattle (I'm open to not casual, though) that we've never been to and that's not a chain (I'm married to Mr. Chain Restaurants himself).
yes! H just emailed me and he said he had planned on this for something else he thought - another friend really loved it so I think this is what we're doing!
Oh, and if you decide not for Pomerol, given you guys just did that Gatsby party, you two could get dressed up, make reservations at Needle and Thread (the speakeasy above Tavern Law). It's a fun place!

I did not, my friend and I wanted to ,but we couldn't put together speakeasy costumes in time. But a few other patrons did. I'll PM you their reservation #.
this is awesome. I wish I hadn't just emailed the idea to H because I realized this would have made a great surprise for something...
I haven't eaten at most of the places mentioned but the chef's tasting at Staple And Fancy in Ballard was very memorable. H and I had our anniversary dinner there last year.

We're hoping to try Pomerol soon. The owners are parents of a friend of E's and their son will start kindergarten with P. SUPER nice family. (They hosted their daughter's 8th birthday party two days before the grand opening!)
If you're willing to make a trip out of it, Hitchcock in downtown Bainbridge Island is good. I've been wanting to try Marche' there too but haven't yet...but I've heard really good things.

I second Ponti Seafood, Art of the Table and Staple & Fancy. If the weather is nice, ask for the patio at Ponti. You can sit & watch the boats go by. Art of the Table is definitely one of my favorites - truly a treat. Staple & Fancy - I've done the Chef's tasting menu with DH & another couple. Really enjoyed it. Whichever restaurant you choose, enjoy & happy anniversary.
