We do a lot of chicken, since we don't really like red meat and you can only eat so much salmon (the only fish my kids will touch). To switch things up, tonight's dinner is chicken pot pie. No cream of crap soup, though...I melt 3-6 (depending on your tastes) tbsp. of butter then stir in 2 tbsp. of flour until it's smooth and bubbly. Remove from the heat, whisk in 1 c of chicken broth and 1 c of milk, return to heat and keep whisking until it thickens. Season with garlic salt and black pepper to taste. Then I stir in cooked chicken cubes and whatever veggies I feel like adding (tonight was a medley with chopped broccoli, carrots and baby corn). Pour into a baking dish, top with biscuits (I use refrigerated ones, you could make your own if you were so inclined) and bake at 400 degrees for about 13 minutes.
Crockpot Chicken and Stuffing - I only make this when I'm home to watch over it, or if I'll only be gone a couple hours. It isn't a recipe that can sit on "keep warm" for hours.

Guava Chicken: cookinghawaiianstyle.com/index.php/recipe-category/recipes/detail/2626/guava-chicken I use chicken breasts since we don't like dark chicken meat. If you don't have guava nectar you can use guava jelly and melt it in a sauce pan with the shoyu (Hawaiian soy sauce-you can get it from Amazon if you can't find it or from alohashoyu.com/ I don't use the Chinese five spice and you can omit the oyster sauce if you don't like it. Serve it with white rice.
Shoyu chicken: Mix one cup shoyu, one cup sugar and one cup water. Pour over chicken breasts and bake on 400 for 30 mins or until chicken is cooked through. Serve with rice. There are many variations to this recipe online. I got this one from a friend.
Garlicky Spinach Saute one tablespoon of chopped garlic in olive oil or butter (sometimes I use both) add a bag of fresh spinach. If you use frozen boil and drain first then add to garlic. I sometimes add a beef/chicken bouillon for more flavor and more garlic as well.
Garlicky garbanzos with white rice Saute one tablespoon of chopped garlic in olive oil or butter (sometimes I use both) add one can of drained garbanzos and cook for ten minutes. I sometimes add a beef/chicken bouillon for more flavor and more garlic as well. Serve with rice. Double the recipe if you want more garbanzos.
You guys are killing me!!!! I don't have a crockpot or Trader Joe's!!! Is it worth investing in a new crockpot??? I had one in the States but didn't use it much. Of course, I didn't cook much before kids.
Yes you want a crockpot! I generally use mine once or twice a week. I'm not sure how you time schedule is but with H and I, we don't get home until 6, then want to workout so we generally don't want to be starting to cook dinner after 7. I can spend 10-15 minutes prepping the night before, plug it in before we leave for work, and come home to yummy dinners.
