I wouldn't do it myself...even if I tasted the food first and found it "lacking" something I prefer, if the condiment wasn't already being offered I'd likely do without. But everyone is different so I also wouldn't think twice about someone who did ask for them, whether they'd tasted the food first or not.
As a professional chef, yes I would be offended if I cooked a meal for someone (for free!) and they added salt to it without tasting it. Upscale restaurants don't have salt and pepper on the table because food should be properly seasoned.
But, as a nonprofessional I wouldn't care. People have weird taste and ask for gross combinations of food all the time. I don't get offended at people's bad taste.
But who doesn't own a single thing of hot sauce? Lol.
Well i don't own any condiments other than ketchup. No mustard, mayo, hot sauce, or anything, but that is neither here nor there.

I do think its rude to salt/season food that someone else has prepared for you without tasting it, but I wouldn't care enough to post about it here if it happened to me.

Me. LOL. Seriously, I didn't know it was weird to not own a food item/condiment that you never ever eat.
ETA: As for the OP, I think it's exhausting to be offended over this. My H salts a lot of things before he eats them and he grew up in a family that did so. It's just the way some people eat.

Personally, I never add additional seasoning without tasting a dish. But FWIW, this is why I just keep salt and pepper shakers on the table for general use. You need salt? There it is.
I would have side-eyed his request for hot sauce but mostly because hot sauce does not belong on Irish stew.

I love ketchup on everything but I never ask for it at someone's house unless it is offered. I personally find it rude. HOWEVER, it does not bother me when others do it. I just do not.
eta: we also do not own hot sauce. Its just not something either of us eat. But if H's best friend ever comes to visit again we will buy some. He puts it on everything. I felt terrible that I didn't have it last time.
I am LOLing at the thought that something can be over salted. I salt everything, and almost always need a condiment of some sort. I bring my own bottle of 57 sauce to grill outs at friends to make sure I am covered

Yeah me either. I don't eat anything at home that would need condiments. I just have salt and pepper.
It's braised beef or lamb, simmered in a pot for hours with potatoes and veggies (carrots, onions, peas) in its own gravy. It's a rich, delicious winter food. It's a great way to make tough, cheap cuts of meat tender and delicious.
My father was big on what he called 'tasting your food' and would not allow me or my friends to add ketchup, hot sauce or A1 to foods he didn't approve. As in, "Mr. Smith, can I have ketchup for my scrambled eggs?" - he would say, "No" laugh that it was a ridiculous request, like the kid was joking, and not allow it. I don't know what he would say to an adult. But he would be HORRIFIED if someone doused his homemade Irish Stew with hot sauce.
I still get a knee jerk reaction when I see someone pour something like ranch or ketchup all over a dish I made - but I get over myself quickly, too. Life is too short to really care. Although I was raised to be shocked and horrified.
I don't want to fight with one of my favorite gal pals over salt, lol. Are you really offended if someone salts something you cook?? It's...salt, it's not like they guy tasted this Irish stew and was like, 'Dear God, this needs more garlic, it should have simmered longer and you should have made your own stock instead of store bought to get a richer flavor. lol. Its just salt, people have different tolerances for it.
H and I are VERY different when it comes to salt. I think a lot of things are too salty and he adds salt to almost everything.
It's more the hot sauce than the salt. My H puts it on everything. He's a good cook too, and works hard on flavours, so I don't understand it. I don't use salt, typically, so I wouldn't have strong feelings about the salt. My food would require salt for certain people. Offended is a strong word though, I don't feel that strongly.
I have some serious foodie friends who plate everything as they want it eaten, and don't give you an option to season it. If you asked, some serious side eye would be thrown. I'm sure there's some middle ground, I think my silent judgement is close, lol.

It's not even a little bit exhausting to be served excellent food and wine and not lift a finger. I love food, and trying new things, and I don't want everything to taste the same. I'm not a food snob either, I like salty fries as much as the next person.
I'm not much of a salter myself but I know people who are. For some, everything tastes the same (bland) if they don't add some spice/salt.

I will say my grandfather used to keep cheaper versions of certain foods and drinks for his family members (mostly his inlaws) who "ruined" it with sauces and such. For example, he always bought nice steaks, but would only serve cheap ones to his inlaws who covered it in hot sauce. He also kept cheap vodka for people who wanted to mix it with syrupy mixers. It drove him crazy that he bought nice things and spent time cooking/preparing them and then others "ruined" them (his words.)

LOL. MH must be the most offensive person ever. He eats hot sauce on everything, and salt. He has asked if it hurts my feelings when he puts hot sauce on everything, and I was like ^o) no.
