Hi I am Portuguese but now a Canadian who has lived in Ambergris Caye Belize for the last 6 years. My new DH of almost 3 months is Scottish and has lived here for 4 years. I have a DD who is turning 8 in June. Currently my DH is working in the Grenadines as he has gotten a good work contract. However we have decided not to move there for various reasons and he will be back in a few short months.
I'm late to the party, because I assumed this was an "Intro to the new board" thread! I didn't realize we'd already snagged a new poster! Sweet!
By way of introduction, I'm the resident crazy cat lady. I'm an American living in Oslo with two cats. My household has a 2:1 cat-to-human ratio. Probably not good.
But I assert that this is better than having a 1:1 ratio while I shared a two-bedroom apartment with my Indian not-quite-ex-husband. And so I'm happy to be in my own place with the two felines (who like me better anyway).
Oh, and I now have a boyfriend in Brazil. That comes up from time to time.

Hehe, I've been eating tater tot casserole since I was in pre-school. It is really easy to make and tasty. Like most casseroles you can pretty much add whatever you like to the base. The basic recipe is just ground beef, cream of mushroom soup (in the US that generally means Campbell's but elsewhere there are healthier soup options) and a bunch of tater tots (or croquettes) both mixed in with the soup and the beef and placed on top. This recipe link suggests cheese though I never had it with that. Really, it doesn't need that.
With a vegetarian in my house, I've come up with my own sauteed vegetable base instead of the beef. I use green beans, onions, mushrooms, garlic and whatever else I've got around. Basically the recipe can be "so bad it's good" or surprisingly healthy.

Wow, I have not figured out how to reference someone else's comment yet so it might be a bit of trial and error. Thanks for saying hi everyone. Again, I have to say that I'm very impressed with how much the posters on here seem to be "living outside of the box".
Just saw this and wanted to welcome you! I have been MIA for a few weeks after my Spanish DH's and my move to Frankfurt from Madrid with our 6 month old daughter.
