Green beans with tomato sauce - my Greek friend taught me this awhile back, and it's a nice way to use up a ton. Pretty simple, saute up some onions in olive oil, add green beans, a can of tomato sauce, salt and pepper to taste. Cook over low heat for about 30 min.
I also love Chinese style green beans - saute green beans over high heat for about 5 min, add in soy sauce, garlic and sugar (about a tbsp of each) and a couple tbsp of water. You could add in oyster sauce if you have some too. Cook until desired doneness.
Saute a yellow onion until soft, add bacon crumbles and cook most of the way, add green beans and cook alllmost until desired doneness. Add a 50/50 combo of soy sauce and honey (1/2 cup of each normally) and let them finish cooking while that sauce thickens up. Sooooo good!
Basically it is a creamy garden vegetable stew. Peas, beans, new potatoes, carrots and corn. Boil in water, drain when cooked. Add milk until the veggies are swimming and about 1/4C of butter. Salt and pepper to taste. Reheat and serve.
