I suggest you season it before you use it. Heating the pan with oil allows the metal to expand and draw the oil in. I usually start on the stove top and then switch to the oven at a lowish temp and let the pan cook for a few hours.
You need to season the shit out of that pan. Lard is your friend in the seasoning department.

Lodge is pre-seasoned so you do not have to do this.
Oh, and as far as recipes go, I'm afraid I'm not much help. I use my cast irons to sear/cook meat. I make mean steaks and pork chops
One thing I love to do is sear a big, cheap cut of meat (like pork butt or chuck roast), toss the meat in a slow cooker, and deglaze the cast iron with a vinegar and broth. I put the broth in with the meat, add garlic, onions, and other aromatics, and then let the whole thing cook all afternoon.

I don't think you're anywhere near where I go apple picking. I'm in the Finger Lakes, so have access to all of the Lake Ontario apple orchards. And all the good Finger Lakes wineries.
