My DH hit peak gyro a while ago and couldn't eat them again for over a year. So I think it's a thing.
My Greek husband would be both confused and horrified by this.
There was a really great gyro place by his apartment in law school. I think there was a solid 2-3 months when we were dating where every email or text I got from him mentioned either going to, coming from, or being at said gyro place.
Can we talk about shrimp & grits now? Stop serving dry ass grits!

Authenticity is hard to pin down though, because cuisine by its very nature is constantly changing and adapting to its environment. H's grandmother made baked, stacked green chile enchiladas with cream of mushroom soup as a thickening agent. If she were alive she'd rip anyone a new one if they tried to tell her that her enchiladas weren't authentically Mexican. I mean, she WAS Mexican and that's how her family made enchiladas.
I have managed to convince H to replace the concentrated soup with a slurry of buttermilk and cornmeal. So I'm doing my part to chip away at that particular piece of "authenticity."
I think cream of mushroom became a thing in Mexico at one point (the 80's, maybe?). My mom used it when she was trying to cook "American food".
My Mexican friend INSISTS that real enchiladas are made with cream of chicken soup and she says that's how all her family and friends in Mexico make it. She's militant about cream of crap enchiladas like tacosforlife is militant about lasagna, tacos, chili, and every other food (so, that's a lot.)
It's odd. My other Mexican friends think it's odd. I think it may be the equivalent of how some Americans use cottage cheese in lasagna and some use ricotta or a béchamel.
1. I have IBS, so I don't like to tempt fate more than once in a blue moon. Tacos are seriously delicious but they hate my guts. 2. Don't you Pinterest? You can do those things in the crockpot in like 50 seconds apparently. (have not tried it) 3. It's crescent rolls with the meat filling and garnish with whatever the heck you like in your tacos. It sounds gross but it's super tasty.
I can see using it to create shredded meat to go IN an enchilada. Like a nice pork shoulder with some fresh tomatillos and a bit of broth and spices and such.
My favorite part is since it's just me and H, I can freeze half the chicken/sauce any time I make it and the next time it takes almost no time to put together.

Whatever. I'll join you in judging those who dare to use organic mac&cheese and kosher dogs to serve their children. That's not authentic Midwestern small town!!!11!!!!1!eleven!
LOL. There are so many foods I cannot eat because of texture I could start my own post. Grits, oatmeal, jello, marshmallows, cotton candy, most mushrooms, coconut.

I don't care for tomato-based sauces on enchiladas. I can't speak to "authentic Mexican" (although there is tons of regional variation in enchiladas across Mexico). But that is definitely my Tex-Mex bias coming out.

Grits question! So I made a recipe by Alton Brown last week. I used goat cheese and it was sooooo gooooood.
HOWEVER.
The recipe calls for cornmeal. Apparently some people think this is a bastardization and it should only be hominy meal, not regular corn meal. True? Because one nice thing about making grits is that I always have cornmeal in my house. Hominy, not so much. OR should I switch out all my cornmeal for ground hominy?

Not so fast. You need both. You need cornmeal. Cornbread. Fried fish. Thickening up a stew. Too many uses. But hominy is necessary too. This is like saying should I buy sugar or flour.

But here's what I love: Greek yogurt with a squeeze of honey and trail mix. I just buy the big bag of Costco trail mix with peanuts, almonds, cashews, raisins, and M&Ms. I like crunchy mix-ins in my yogurt.

Does it have a lot of sugar? I also try to keep my yogurt either plain or at about 100 calories. Oikos triple 0 or Chobani simply 100 for the flavored ones.

I hate Chobani. I can stand Oikos. I don't have a Wegmans near where I live now. I know for sure Whole Foods has Noosa because the gas where I get it. I never ever get plain (what's next--vanilla is your favorite ice cream flavor ?), so I have no info on that. It is very creamy, however, and not sour. Please tag me and thank me after we work together to change your life.
After all this, I still haven't come up with next week's menu. I have no meal plan after tomorrow! I really need to figure something out. Bah!
Can we discuss how tilapia is nasty?
I don't think it's nasty, just boring. Like why, if cod is there, salmon is there, flounder is there, even sole's boring ass is there, why would I buy tilapia? it just doesn't make sense.
I don't really have a problem with it, but if arguing about it gets us to 10 pages of food discussion, I am all for it!

pennypenny, how long have you been meat free? That will determine my level of assistance. I don't know that I feel good about helping someone come back to meat, but let's see lol.
