I something similar, but it's all in the crockpot. Potatoes, stock, onions, butter, s&p in the crock; cook all day (you can't really overcook, honestly, but I think I do it on low 6+ hours. Add cream or 1/2 & 1/2 until it's the consistency you like. Serve with all those same toppings. Bam.

Yes. This is one of the rare times I actually peel potatoes, only because it's unappetizing with the skins mixed in. (It looks pre-eaten, if you know what I mean.) I usually just cook the potatoes until soft then add in the dairy, mash with a hand masher and serve.
