Opryland is pretty cool to walk around. This time of the year it's hot or miss. You may get stuck watching lighting crews assemble Christmas displays. There are restaurants and bars inside the resort. They are decent, but pricey. I gave not been there since the flood remodeling in 2010.
Oprymills is just a standard mall to me. Others love it. If you are looking to shop that would be close.

I would really try the Pharmacy if the weather is at all nice. They have a beer garden that creates more seating. If it's raining, try somewhere else; you'll be looking at a long wait at the Pharmacy.
Go at off times. I'd go around 5 for dinner or 2 for late lunch. It's a popular location.
I second the Broadway recommendation. There's always live music. Lots of bars and restaurants to duck into, have a drink and listen to some local musicians - any time of day, basically.
If you're into wine, Arrington Vineyards is a neat place to visit. It's a bit of a drive (20-30 minutes maybe?) but it's a nice place.
For dinner - Kayne Prime if you love steak. Cantina Laredo is great if you like Mexican food.

I'm an hour south, but eat out a lot. I don't really care for Opry Mills but on a rainy day it has a few good stores. I always take visitors to Loveless Cafe, I also like the Spaghetti Factory. I would just go downtown and spend a day walking, music row and the such. My mom also recently liked the American Pickers store, not as big as I expected but I like the show do it was interesting.
Lucy Honeychurch How could you not suggest the Omni Hut?!? BTW, if you like their food, we have a lot of their recipes around here somewhere. The M'boro paper published them back in the 80s and my mom saved it all this time.
It's actually in Smyrna, so its a little of a haul, but go and get the Tahitian Feast. If you go, either get there early or late because they don't accept reservations and you could end up waiting forever--but worth it. The decor is tacky, they haven't changed a single thing since I grew up in Murfreesboro in the 80s, but my god the food is so, so good.
When they ask what type of soup, get the egg drop. Trust. And buy a bottle or 12 of their teriyaki sauce to take home.
OMG, I can't stand the Omni Hut. lol. I went once and it was seriously the worst! They must have changed menus or something. Also, you have to bring your own booze.
themysteriouswife and lucyhoneychurch are right...go to Hattie B's. The one in West Nashville on Charlotte Pike will have a significantly shorter wait time and it has a free parking lot behind it. The hot chicken is fantastic. I also love their mac & cheese.
I really like Whiskey Kitchen's burgers. Especially the one with their homemade cheese.
If you do go to Loveless Cafe (which I love, especially their smoked pork chops with peach preserves), on the way back you should get dessert at Crumb de la Crumb. Best cupcake I've ever had, hands down.

dove, for shopping, a lot of people like The Mall at Green Hills and just a block or two away is a cute street with lots of shops, too, like West Elm, lululemon, etc.
For easy hiking, I like Edwin Warner Park (which is down the road from the Loveless Cafe), which has a great paved loop (along with more rugged, off-the-path trails). I like Percy Warner Park a lot, too, but it is more intense than Edwin and a lot bigger. I actually got lost in Percy Warner on Sunday and a 1 hour hike turned into a 3 hour hike, lol.
I enjoy Bicentennial Capitol Mall State Park to walk around. It's next to the Farmer's Market and an uphill hike to the State Capitol (they give tours of the Capitol throughout the day) and the TN State Museum.
If you like historic house tours, Belle Meade Plantation is nice and has a wine tasting at the end of the tour. The Frist is a great a museum to pass the time, too.
ETA: I always forget to add Belmont Mansion. I really like their tour.
Glitzy and LHC both gave great recommendations, but I have to add that you MUST eat lunch at the Farmers Market downtown on Rosa Parks Blvd. I go there almost exclusively for Bella Nashville (the most delicious pizza probably on Earth), but really it's full of amazing food.
And the Frist Center is a really great museum with easy parking and interesting exhibits.
You should also walk around the Gulch some if you have time. I highly recommend Biscuit Love brunch; they're open 7-3 every day and they will change your life.
I'd be happy to throw in some music venue recs if you'd like something other than the touristy neon lights and honky tonks of lower Broadway.
