We are going in Mid April when they should have moderate crowds. We are staying offsite at the Wyndham Bonnet Creek Resort in a two bedroom condo. It's me, H, our 26 month old DS and my father. I typically like to book breakfast ADRs for before park opening so we are fed and ready to ride standby as soon as the park opens. So far, I have managed to schedule two Tusker House reservations for 8 am with a park opening of 9. However, both of these days, Animal Kingdom has AM EMH beginning at 8. How packed will the park get in that hour? Would it be insane to think that we can get on the safari with a somewhat short wait or should I just avoid parks with AM EMH if I am staying offsite?
Next question, I would love to ditch the kid and dad one night and do a date night followed by the Magic Kingdom which is open until midnight. Where should we eat? California Grill? Any other suggestions?
If EMH start at 8 and you have breakfast reservations at 8, by the time you get finished with breakfast the park will be very busy. You probably wouldn't have a particularly short wait at the safari...unless you only take 30 mins at breakfast. Even so, many of the EMH people will go to the safari first so it'll be busy.

Thanks! I actually joined yesterday and it's been a help. One of the days it's a crowd level 6 and the other is a 7. I knew I should just avoid the park those days. I will just try to get a later ADR on a non EMH day while still checking for an earlier one.

Avoid. AVOID at all costs!! If a park has EMH (morning or evening), don't go there at all. It will be swamped by resorts guests who just figure they should go to the park with the extra magic hours.
Check out the crowd calendars on easywdw -- they are usually spot on for me (and they're free!).
We stayed at a 2 bedroom Bonnet Creek condo in Feb 2015. I really liked it there, and it was a convenient drive to the parks.
For date night you could do Cali Grill, Narcooses, Citricos, Yachtsman Steak House. There's also Schulas, Il Mulino or BlueZoo.
If you want to splurge, DH and I really enjoy having dinner at Victoria and Albert's.

Building 6 is the newest building, and that's often popular.
I think we were in building 4, and I liked it there, because it was closest to the parking garage. Since we did a lot of Disney time, I liked that convenience because there were never open spaces in the above-ground lots.
My kids loved the splash pad and lazy river at Bonnet Creek. We did two resort/pool days and took advantage of the pool, shuffleboard and mini golf they had available.
Their food options left much to be desired, but we stocked up on groceries, so the lack of good dining options wasn't a tragedy.
