DUDE, TEXT ME. I want to do this, or something fun up there. Every time we go to Duluth, we go for the day and we think "damn it, we should have stayed because the drive is long". And you know you're my camping spirit animal. Is there a lodge with a shower/bed though?

I usually only work 4 hours on Fridays, but decided to say screw it and took PTO today. I still had to go have my annual exam today, but HOT DAMN. Three day weekend after an insanely stressful two weeks almost had me in tears when it was approved.
I made a cheesecake in my Instant Pot and I'm letting it cool now. I'll use it again tonight to make honey sesame chicken and rice and then tomorrow to make more yogurt. M LOVES the yogurt with honey way more than the Hello Kitty yogurt in our fridge right now. Proud mama moment. So cool that I can make it myself for so much less.

Yogurt recipe please!
My husband is picky about yogurt texture, so I used the Tidbits' recipe and tweaked it for us to be thin like Yoplait.
INGREDIENTS
1/2 Gallon 2% milk
1/4 Cup Yogurt with active cultures (I used Dannon Okios Triple Zero)
1 tablespoon Vanilla Extract
DIRECTIONS
Remove gasket from lid.
Add milk to instant pot liner and press "Yogurt" button. Press "Adjust" button so "Boil" shows on display.
When Boil is finished, remove liner and cool to 115 degrees (I placed it in an ice bath in my sink and it took less than 5 minutes). Add Vanilla and Yogurt and whisk to combine.
Press Yogurt button and incubate for 8 hours.
Strain yogurt (This is a personal preference. I did about 45 minutes so it was still thin like Yoplait, but go much longer if you like it really thick) and cool in fridge .
If you want to sweeten with sugar, I added about 5-6 tablespoons of sugar after it was strained and then let it sit overnight so the sugar dissolves.
