Everyone has better ideas than I do.
I'm not much of a cook and since I had a baby this summer I have practically stopped cooking altogether. So I would make some Zatarain's red beans and rice and just mix it up with the chicken and eat. If I wanted to get fancy (lol) I might also add some cut up sausage.

We thought so too! We have a ton of uncooked tortillas from Costco we are trying to use and this was a delicious way of using them up.
We use shredded chicken for everything. I typically cook whole fryers in the crock pot, and then pick it apart and separate it into two separate meals. Chicken pot pie is usually #1, but I also: freeze it for another day, or mix with cilantro, green onions and salsa and make either tacos, enchiladas, or quesadillas, toss in buffalo sauce and serve over a spinach/blue cheese salad, make this buffalo chicken egg roll recipe, toss in a 1/2 and 1/2 mixture of pesto and mayo then make pesto chicken paninis with roasted red peppers, provolone, and spinach. The choices are endless!
