You can get something closer or during the trip. But if you want a specific restaurant at a specific time the 6 months is often needed. Everyone plans their trips differently and/or have different expectations.
If I had tried to get 8am reservations at akershus 30 days out, I highly doubt I would have been able to.
My friend booked a trip 55 days out for the first week of March so slow time and got good restaurants by everything was like 9:30am or 4pm so rope drop was basically pointless and her kids didn't get to nap.

i booked 8:40 30 days out (ended up switching it to lunch shortly before we arrived).
I will say, the point for us was to get there literally as it opened. We walked over at 7:45 from the beach club and we're taking pictures with belle at 8:03. And in future world by 9.
Believe me, I don't love picking my restaurants months in advance; but since it's the norm and the only way to get exactly what you want, not much else up do. We also plan Disney trips a year in advance usually. If I planned a trip more last minute, I would have different expectations and possibly eat less table service.
There were rumors that more table service places would go the way of the skippers canteen, day of/walk ups only. I think that would be great in some ways.

That was us at Tusker House last trip. We were in line for the safari before they had even opened the park. We never seem to have that luck at Crystal Palace (the only pre-park ADR we do every trip) though because it takes FOREVER for the characters to come around and with two kids under 4, we wait for all of the characters at every restaurant.

After just returning from a week of skiing out west.....I laugh at DIsney being expensive lol. The damn lift ticket for one day of skiing (only open from 9am-4pm) was more than one ticket to disney. Disney felt like a damn deal.
