I had this and I can't rave about it enough. It was so easy to make, came together pretty quickly, and the flavors were so simple, yet it was delicious. I used bacon instead of prosciutto. The real test was when H requested the leftovers for lunch tomorrow. He never does that.
Of course, now I'm looking at the bacon grease splatters on my white shirt. I need to get on top of some stain remover so I don't ruin this shirt.
I roasted some chicken breasts and broccoli. I scattered some garlic cloves around the pan, then made some whole wheat penne and squeezed a couple cloves on it and sprinkled it with some grated parmesan cheese. The broccoli got olive oil and lemon zest, and a few grinds of Whole Foods' citrus seasoning blend.
We're having McDonald's. My H had to work late & we have people coming over soon. I'm so ready to get back to cooking. I manage to put something on their plates at lunch, but by dinner time, I'm done.

H is out tonight and I teach a late class so I just made a wrap sandwich and a side of raspberries for myself. I'll have chocolate cashew milk when I get home later
Hamburgers without the buns (streaker burgers? ... I need a fun name for these. We're going to have them more often this summer), curly fries, and spring salads.
Let's see, dd had strawberries, pickles, and a banana. Ds had tomato soup, a granola bar, and a banana. And I am probably going to have Ramen in a few minutes.
H is on call this week so I don't tend to cook because I have no idea if/when he will be home.
Last night, I made a whole roast chicken, peas with crumbled bacon, and baked red potatoes.
Tonight, I made a chicken pot pie with the leftover chicken. I also made oatmeal raisin cookies today.
Tomorrow, I'm thinking takeout pizza. <---I won't be able to eat it, since the crust will probably have sugar in it. I'm going refined sugar-free this month.
