DH and I brought our 2 sons (4 and almost 1 at the time) and my MIL to Disney World for a 4 day trip in mid April. It was fun for the kids, but A LOT OF WORK. We only went to MK and stayed at the AOA Cars Suite (the room and resort was amazing!)
When we got back home, we jokingly said we wanted to go back just the 2 of us. My MIL agreed to watch the boys so we could go for a long weekend. We figured we needed to go soon before she changed her mind.
We went last weekend (memorial day weekend) and it was awesome!
Recap:
We stayed at the Port Orleans Riverside. We were given an "Alligator Bayou" room. I wanted a mansion side room, but we were hardly ever in the room, so it didn't matter. We were fairly close to the lobby/cafe/busses and the main pool.
We flew from Massachusetts and we arrived around 9:00 pm (way past our normal bedtime) on Thursday and pushed through our tiredness (I was up with the baby since 4 am). Took the ME and got to our resort, we ate in the Café and then got settled in our room.
Got up on Friday and had breakfast in the café then headed to HS. We had a 10:30 am fast pass for the voyage of the little mermaid. When arrived to HS around 9:30 and walked by TOT to see a 20 min stand by lane. MH talked me into going on (I'm petrified of these types of rides, but realized we weren't going to get an opportunity to do this solo trip again for a looooong time, so I agreed). Holy CRAP so scary. He loved it of course but my voice was hoarse from screaming.
After the ride, we walked over to voyage of the little mermaid. It was cute but I much preferred the ride at MK. We also had FP for the rockin roller coaster and Star Wars Launch bay
Other things we did:
Muppet vision 3D
Star wars: Path of the Jedi
Walt Disney: One mans dream (we didn't stay for the Alice preview)
Had lunch at the ABC Commissary (ehh, not great)
LOTS of things were closed off. Like entire sections were dead ends and there was construction.
We left around 3 to go back to the resort and swim. Then we took the boat to Disney Springs and had dinner in the resort café. Then we went back to HS to see Fantasmic (additional FP) and then the Star Wars fireworks (we asked a cast member a good place to watch. She told us the area in front of the Indiana Jones show entrance was good. It was great and no crowds!
Saturday we went to Epcot. I was the most excited to go here. It was fun, but I don't think we will go back there anytime soon (at least not until the boys are older). We walked the world showcase. MH loved the gelato and I loved the macaroons. We went back a second time to get more!
We had FP for Mission Space, Spaceship Earth and Soarin'. We had lunch at the Coral Reef (steak was AWESOME!).
Other things we did:
Ellen's energy adventure (MH remembered this ride from when he was a kid, so we went on it. It was cool but DATED. Holy crap, Ellen had longer hair!)

We left around 4 and went to the hotel to swim and then back to Disney Springs. Then Dinner at the café.
We left the next morning. It was a relaxing and fun trip. I missed my boys. We were careful to not buy too many Disney things as souvenirs for them because we didn't tell him we went back. We told my oldest that we found a Disney Store at the airport and that seemed to explain everything to him (he is 4)
Did you really like the hotel restaurant or was it just easy?
Epcot is my absolute favorite! Don't count out taking the kids! Mind love it.
We were trying to do this trip cheap since we went just a month before. We had the quick service dining plan, and The café was so close to our room it was easy and the food was pretty good (for quick service).
Nice, I'm jealous you got to go back by yourselves right away when you were still on a Disney high! Did you do a trip report for your April trip too? Is EPCOT really not kid friendly? We took my oldest there when he was 15 months but he didn't really talk to ask to do anything specific.

Yes, we loved the pasta bar!
I feel like it's one of the best QS deals on property. One time I got linguine with pesto sauce, sun dried tomatoes, Portobello mushroom and shrimp and it was very fresh and delicious and only about 11 or 12 dollars. the portions were huge, too, so DH and I shared it sometimes. We were on the dining plan so that made it really easy to stretch out our credits and not pay OOP for any additional meals.
