We leave soon, like very soon. Still can't decide on the dining plan. 2 adults, 1 child and a 2 year old. Lots of characters meals. On paper it works out to saving money but is 1 table service, 1 quick service and 2 snacks per day too much food? I figured we could make the snacks into a light meal and then share with the toddler the rest of the day.

I'd do the disney dining plan (1 ts, 1qs, 2 snacks). If you don't use all of the credits, you can use the snack credits at the end of the week to get snacks and take home with you. And you can switch the meals to snacks also if you ask nicely.
I ran out of snack credits like two days before we left but I think DH wasted a bunch of them on bananas (pun intended!). Anyway I don't think it's a bargain but I liked having it all paid in advance. We used it all easily.

If you have a lot of character meals, then yes it's usually worth it.
On our last trip, we did 4 out of 7 of our TS credits at a character meal, and two visits of BOG QS. This trip, we are doing pretty much the same but adding one more character meal!
Can you book with Play Stay Dine? That's what we are doing and when I pencil it out we come out ahead, but it's bc the dining plan is discounted with this offer.

We were in the exact same boat as you (with one not old enough to be a Disney person) and I think he dining plan worked out for us. We did a character meal almost every day. That pretty much covered the out of pocket costs so having a few extra snack credits didn't bug us and we just used them for treats to bring home.
Remember that QS credits are not broken down into adult/kids. So for us that helped stretch our QS meals further. We had the kids split an adult meal.

It depends. Sometimes the math works out in favor of DDP and sometimes not. We get the DDP if we're doing a lot of higher priced sit down or character dinners. If our plans include mostly TS lunches or breakfasts, we pay OOP because it tends to be cheaper.
We pay for our kid's QS meals OOP and use his credits for our adult meals, or convert them to snack credits.

We loved the dining plan. Could we have ate for cheaper, definitely, but it was so nice just not having to worry about it. We also got our money's worth. The meal plan was $600 and we would have spent $805. We also blew two lunch credits on additional snacks so it probably would have been more like $850 if we had done lunch with them.
Anyways, for us, it was so nice to not have that black cloud of money hanging over our heads. Had we paid out of pocket in the parks I know at every meal we would have been like '$60 for this?!' We were able to just enjoy Disney and not think about what everything was costing and what we have in the bank account, etc.
