We've always served alcohol at our parties where adults are also invited. I wouldn't go so far as to call it irresponsible - especially to someone else. If they don't want to serve alcohol, that's their decision. I mean, even Chuck E Cheese serves alcohol

At your home I think it is absolutely fine. Just make sure it is clearly labeled "adults only" or "contains alcohol" so someone doesn't think it's lemonade, etc. As a parent I would love it. I mean, I think it's frowned upon at a Chuck E Cheese to bring a flask or something, but I see nothing wrong with having it as an option for adults.
