Mine's a cheat.
I make about a pound of pasta and then cut up my favorite veggies. Usually a can of black olives sliced up, a cup and a half of frozen peas (defrosted), some cherry tomatoes, and some roasted red pepper chopped up. Sometimes I add chopped up broccoli. Oh, and scallions!
Then I mix equal parts Italian Dressing (a kind you really, really like!) with vegan mayo to make a creamy, flavorful dressing.

I do something really similar to Darkling. I make a vinaigrette with vinegar, oil, and sugar, salt and pepper then toss that with cooked pasta and my favorite veggies (green beans, onions, tomatoes, etc.)
