BeauJo's is a CO chain - so it'd be the same as the one in Ft Collins (super thick crust served with honey)
on I-70 between DIA and Vail:
you can stop at Buffalo Bill's grave - the museum is okay - but what I really love is the huge patio and the views of downtown, Golden and the mountains.
Idaho Springs is a cute little town - if you want to get out of the car about 90 min from DIA and walk around. shops, restaurants, etc...
Frisco is the same-ish as Idaho Springs - they also have a great sledding hill.
if you like shopping - there are outlets stores in Silverthorne.
Dillon has the Ice Castle right now - you'd need to buy tickets ahead of time and I liked it better in the evening (after dinner) vs day - but great at all times. The DAM Brewery is close by for lunch/dinner. icecastles.com/colorado
In Vail - if you just have the time that DH is skiing - I'd wander around the Village, and get a massage. not sure what you're looking for in terms of dining - but I had a great experience at Allie's cabin - it's a sleigh ride to the restaurant. There is also Beano's Cabin in Beaver Creek (same idea as Allie's)
I love the German restaurant in Vail, can’t remember the name off the top of my head though.
Beau Jos is good in Idaho springs. Breckenridge is 15ish minutes out of the way but a fun town to walk around. They also have the Breckenridge troll which is a fun thing to see. In Dillon, the Dam Brewery isn’t bad.
