This seems like something I should be able to figure out on my own, but man, reading reviews can really overwhelm me sometimes.
My kids have always just used whatever extra blankets we’ve had lying around for bedding. Random fleece blankets we’ve been given, handmade blankets from grandma, etc. It’s a mish-mash that has never lent to the kids making their beds. I haven’t really cared, but my oldest (8) has understandably asked if he could have regular bedding so it doesn’t always fall off him in the night.
What bedding would you recommend? Where I’m stuck is that I don’t want to spend a lot, but I also don’t want to have 8 million pieces of bedding. I want to set the boys (6 & 8) up well to make their beds. FWIW their bedroom is in a basement that tends toward chilly, particularly in the winter.

We’ve had good luck with Target’s pillow fort line. We have sheet sets, a comforter, and a quilt from them. All wash well (poor peed on quilt) and have lasted many years.
I would buy each a mattress protector, fitted sheet, flat sheet and comforter from Walmart/target/amazon/bed bath and beyond. It’s not that pricey. You can get bed in a bag sets for relatively cheap which will have the sheets and comforter in it and then just add a mattress protector if they don’t already have one.

LOL. This is an appropriate question given the rambly nature of my post as well as a lack of specifics.
They have mattress protectors and fitted sheets, but we've never used appropriately sized blankets/comforters. I guess I'm hoping to find one (or two at most) blankets/quilts/comforters per bed so that the kids don't get overwhelmed trying to straighten up several blankets, but want them to be warm enough.
I'm pretty sure I'm making this way harder than it needs to be.
My kids have quilts because I think they wash better and don’t get lumpy. One is a random one from Homegoods that is fine but has faded a bit in the wash, and one I got from kohl’s that has a silkier feel and washes way better.
They’ve started putting fleece blankets over the top because apparently they aren’t warm enough

I also like the pillow fort at target. Some are soft and cozy and some are crunchy, so go to the store and feel it out. I saw a lot at my store on clearance lately.

This seems so bizarre to me. As soon as my kids switched from cribs to toddler beds, I bought them sheet sets with a fitted sheet, flat sheet, and pillow case. And then when they switched to actual beds (ds twin, dd full), I bought them comforter sets and 3 sets of sheet sets (could get by with 2, but I like options, and now they each have about 5 because they like flannel/fleece sheets in the winter). DD sleeps with a sheet and a blanket, but not with the comforter on her, so she has blankets that match her sheets and comforter set. DS doesn't like blankets, but does like his comforter on him. So I got rid of the blankets I bought for him originally, and I wash his comforter every week when I change his sheets. Both kids make their beds every day, although ds's 'decorative pillow' often gets left on the floor. DD puts 3 decorative pillows on her bed every day when she makes it. I'm pretty sure ds's comforter set is from Walmart. I let him pick out any that matched the colors of his room. He had fun sheets that matched the colors of his room when he was younger (angry birds and super heroes) but now his are all solid except for a christmasy flannel set. DD's comforter set I think I found online because her colors were harder to match, and is a paisley pattern. Her sheets are mostly animal themed because she loves animals, and don't necessarily match her colors because that was harder to find. She also has a christmasy flannel set and 1 set of solid that does match. I buy sheets from TJ Maxx, Target, and Kohls usually. My kids LOVE the cuddl duds fleece sheets from Kohls, but they are too warm for me. We all like jersey knit sheets (usually from Target or Walmart), and none of us like microfiber sheets, so the rest are all cotton or flannel.
My kid doesn't like a flat sheet at home (she tolerates it at our beach house), so her bedding is fitted sheet, random Ikea quilt from my mom that's soft and then a duvet cover with a washable "down" comforter inside.
She also has a beautiful quilt that my mom made that we use sometimes, but it depends on how cold it's going to be. We usually put it out in the spring/summer.
ETA: I hate microfiber sheets, so everything is cotton. I lucked out and bought a couple clearance sets when target was shifting to pillowfort from whatever the old line was called.
I over thank this last year when I moved DS to his big boy bed. I originally really wanted a duvet cover because it seemed easier to clean, but I couldn't find any cute ones. I hesitantly went with a quilt from PBK and I have to say it's worked out really well. It's warm enough for winter and cool enough for summer (he does add an extra baby blanket to his bed which helps in the coldest part of winter). Then he has a fitted sheet, flat sheet, pillow with pillowcase and pillow with sham. The bedding is easy to clean and stays in place on the bed so to make the bed you really just need to pull the top up. We got this quilt/sham from PBK:
I got the cheapest/flattest pillows they sell from Ikea for like $2 each (these) to go in the pillowcase and sham. That way if he pukes on it I can throw it out or wash in the washing machine.
Anyway--I originally really struggled with the PBK price, but it's great quality and I really do think he'll get many years out of it since it's not babyish at all.

I also agree that quilts work better for kids because they wash much better than a comforter. I would check Target, Kohls, Home Goods, etc., as you can usually find something of good quality on sale/for a good price. While quilts are thinner than a comforter, you can add blankets as needed.
My SIL got my son a NFL team bedding from Amazon. Then of course his sister had to have one as well. I like them. It’s not Pottery Barn quality, but the kids like it. Previously they had other blanket gifts and blankets from my childhood or that we had accumulated. Lots of those little fleece blankets.

Same here. Our quilts are from the Target Pillowfort line and have washed and held up perfectly throughout the years. I just look for something that is 100% cotton.
As much as DS wants character bedding, we stick with solid colors. I was frustrated a few years ago when he had a TON of pajamas that fit him but decided "I don't like dinosaurs or sharks on my jammies!" I can't stand when we have something that functions but has gone out of style or is no longer preferred due to the visual appearance.
We mainly buy textiles, curtains, and upholstered furniture in solid colors. Same goes for bedding and jammies now.
All of DS's pajamas are solid colored cotton thermals from City Threads. (Though he mostly wears his athletic clothing to bed these days.) He can't tell me he doesn't like basic solid colored pajamas. I won't hear it! LOL. We get more bang for our buck buying things he will wear out or grow out of vs. grow tired of.
The same goes for his bedding. We bought 100% light gray cotton sheets from Amazon. (Basics line, I believe?) We have 3 sets. One for his bed, one for his trundle, and a spare. His fleece layers are from Target. We have 2 twin sized teal fleece blankets (twin), and 2 twin sized star patterned blankets (thick.) OKAY! So we do have one patterned fleece items. But they are pretty classic and would go into our family rotation for use snuggling on the couch if he ever outgrows them. Pale gray and white with a navy edge.
His comforter is solid white. I believe it's also Amazon Basics, and is a "down alternative" stuffing.
The handful of stuffed animals on his bed add a pop of color and reflect his current interests. Pikachu, etc.
He would KILL for Minecraft bedding, but I just can't bring myself to spend the money something that may serve us 6 months or a year. Most of the flashy character bedding he likes is also synthetic, which makes him sweat like crazy.
My DS is currently using a blanket his grandma made him (he's all construction vehicles all the time). I actually saved a twin size fleece blanket from my bed as a teenager that DS can use when he wants. (It's red/green/blue.)I figure eventually we'll take him to Target or somewhere similar and let him pick out what he likes best. Actually my twin sister offered to furnish his bed when he's ready. So she'll do that. :-p

I would just buy a bed in a bag in a color or character that matches the room. They are pretty cheap, so I don’t expect them to last forever - which is fine with kids whose interests change. I’m looking for tween-y bedding for my older dd. She has had a purple princess theme (crowns, stars, wands but no characters) comforter since she was 3. 7 years is pretty good lol.
We are using a Ralph Lauren duvet (that was on our guest bed but since that is being turned into a nursery we no longer needed it) and a pottery barn duvet sheet set (the dark blue ones that is spaced themed). I just got a few sets of basic coloured sheets from Marshalls.
My kids all have the target Pillowfort line on their beds but they all insist on sleeping on top of a made bed with one of their fleece blankets. I don't know why but they rarely sleep in the sheets- saves me from having to wash their bedding very frequently!
I have lovely Land of Nod bedding I bought for my oldest daughter that is great quality and I can't quite part with, but my kids have outgrown the style. I can't justify the cost again for kid bedding. Their tastes change too frequently. The Target stuff is cheap but looks cute until they will want something else in 2 or 3 years. And, there are tons of coordinating pillows, wall art, lamps, etc readily available. That said, I do have a PBK quilt on my son's bed that we still love, but I think it's easier to get classic for a boy? It's just a navy quilt with stripes of plaid. For him it was worth it as he has used it for five years now and doesn't ask to change it.
My only caveat is that I, personally, HATE the microfiber sheets at Target. They do have some cotton ones with more patterns available online. If this is something that bothers you as well, don't be taken in by the absolutely adorable sheet patterns! I have some that we stopped using b/c I just don't like how flimsy they are. my kids consistently kick them to the bottom of the bed. I order the cotton sheets now to go with whatever quilt or comforter they choose.

When DD1 moved up to a twin bed, I bought her sheet sets from HomeGoods (2 sets, although we could use another for when she's ill), a twin sized fleece blanket from Target and a quilt from PotteryBarn. I love the PB quilt more than I expected. We got it on clearance otherwise I would have just bought one from Target since PB is so $$$.

But I would expect them to at least have 1 blanket that fits their bed and maybe another one to layer on. Mine seem to like the comforter instead of the quilt idea since our house gets chilly. I can see both sides since sometimes the comforter is too hot- but they can always wear PJ's with shorts in that case instead of super warm PJ's. I would let them choose since they are older.
This is making me laugh - at myself. All of you who are baffled at my inability to pick something out aren't wrong. I don't know why I decided to perseverate on this one decision so much. But I appreciate the honest confusion as it has snapped me out of my analysis paralysis, so to speak.

Eh, my kid has a perfectly matched comforter set that he refuses to sleep under. He’s 6, and sleeps on top of it with his 2 favorite baby blankets, lol.
I let DD pick out sheets and a comforter set. I showed her what was in my price range. Since it's February, winter bed sets might be starting to go on sale so it would be a prime time to scope out some places. We live in a high humidity area so I let her pick out her summer quilt for when I store the comforters away.
My kids have a character /theme sheet set, a comforter and some random fleece blankets. They don’t make their beds every day and DS2s bed has a bazillion stuffed animals. A relative that had all boys only did a bottom sheet and a duvet cover over a down comforter so all her boys had to do was throw the comforter on the bed to make it.
