Costco sells salmon burgers in the frozen section. DS2 loves them. We pan sear on one side, flip, pour a little soy sauce on top, and let it finish cooking through. They're really tasty.
Bean and cheese quesadillas are a good non-meat standby for us. We also do breakfast for dinner pretty often, sometimes with the MorningStar veggie sausage patties, but scrambled eggs, a waffle/pancake, and fruit makes for a pretty decent dinner.
I got ideas from our Knights of Columbus Lenten dinners. They have seafood stuffed shells and cream of broccoli soup this week. They always have some sort of fried fish, fish/shrimp tacos, macaroni and cheese, soup. They don't have the full menu for each week out yet.
ETA: veggie fried rice, cheese enchiladas, tuna salad, shrimp lo mein, cheese pizza -- are all on their menu

pizza, spaghetti, cheese ravioli, mac and cheese, grilled cheese, quesadillas, rice and beans, bean chili, breakfast for dinner (eggs and toast with fruit), vegetable soup with bread. I don't know what sorts of food your kids normally like, but there are so many options.
My kids LOVE the salmon burgers isabel mentioned. I stick them in the oven to roast and finish them off with the broiler. They like them plain with rice or as a sandwich, DH's and my favorite versions dressed them up with miso-soy glaze over rice, and with lemon-garlic aioli, tomato, and avocado in a sandwich.
For vegetarian meals, grilled cheese and tomato soup is easy, we also like chana masala and rice w/ naan and yogurt sauce. Baked potatoes w/ broccoli and cheese, and plain or veggie pizza are also good options.

My really picky kid loves edamame Spaghetti with butter and parm. It has lots of fiber and protein, and taste good. We like it better than regular pasta, though I eat mine with tomato sauce because I have a more sophisticated pallet, lol.

I doubled it, so in a food processor put in: 1/2 cup of salsa verde 1/4 to 1/2 cup of cilantro chopped 1/2 of a medium avocado 2 tsp fresh lime juice a pinch of salt or more to taste 1/4 to 1/2 tsp lime zest
this is so tasty! it can used as a sauce, a dip... whatever you need. in the recipe is it used on swordfish and veggie kabobs.

Is it the Herdez brand? That stuff is amazing and great on salads too. This is less creamy than one, but still good.

I make a feta and herb crusted salmon that's super easy and H loves it. It's just feta, chives, parsley, garlic, lemon juice, salt and pepper all chopped up and mixed together, then spread on a salmon fillet and cooked until the fish is done. I usually serve it with some brown rice and a veggie (either green beans, asparagus, or broccoli).
I have a really good vegetarian chili that I make sometimes too, and you can load it up with toppings: cheese, sour cream, chopped avocado, tortilla chips.
My kids are super picky, but they both love salmon teriyaki served with sushi rice. We put the salmon on the grill or under the broiler and then make teriyaki sauce that they can spoon on top of the salmon and rice. We pair it with spinach, but the kids just eat the salmon and rice.
If god didn't want us to eat fish sticks and mac and cheese on Friday, he wouldn't have invented the Lenten fish fry. I'm not even a practicing Catholic anymore. I just enjoy a good piece of cod with tartar sauce.
My kids all love fish, strangely. My son is super picky but will eat haddock, cod, salmon, etc. So we're pretty good! I usually just do plain baked fish with rice and a veggie or salad. They also love mac & cheese (of course), grilled cheese & tomato soup, traditional retro tuna casserole (!! I couldn't believe it when I made it on a whim and they ate it). They actually love fish sticks, too. Cheese or veggie pizza quesadillas Any kind of egg meal--scrambled, omelets, etc. I'm weird about eggs but sometimes I'll do an egg scramble night Shrimp scampi/Anything with shrimp but I rarely make them b/c they are so iffy frozen and I hate to do the deveining thing with fresh ones
Maybe something like cheese tortellini or ravioli with marinara or alfredo and whatever veggies you care to add? Some of my kids own't eat that, though--they don't like the cheese filling.
