I make a feta and herb crusted salmon that's super easy and H loves it. It's just feta, chives, parsley, garlic, lemon juice, salt and pepper all chopped up and mixed together, then spread on a salmon fillet and cooked until the fish is done. I usually serve it with some brown rice and a veggie (either green beans, asparagus, or broccoli).
I have a really good vegetarian chili that I make sometimes too, and you can load it up with toppings: cheese, sour cream, chopped avocado, tortilla chips.

I don't really eat much meat, but we do have fish and I have 3 boys. Here is what we've had recently if that helps.
Salads - Cesar, Greek, simple herb with balsamic Taco salad in corn tortilla bowls with fake meat (this is the best that my kids like Morning Star Griller Crumbles) Pizza - meatless with cheese, arugula, and olives (kalmata and feta also if you want) - but you can do cheese if you're kids are picky Tofu fried rice Minestrone soup - made at home Tortilla soup with no meat like this: cooking.nytimes.com/recipes/1019107-vegetarian-tortilla-soup Curry Salmon Salmon burgers - from costco in the frozen section Wild Salmon - my kids love them Shrimp tacos Lentil and leek soup Roasted red pepper tomato soup and grilled cheese sandwiches - as fancy with Brie or simple with cheddar as you like Salmon Curry - my kids like one sort of like this cooking.nytimes.com/recipes/11967-salmon-with-yogurt-curry-sauce

pressed sandwich - cut a loaf of good bread in half the long way, bake some eggplant sliced the long way, zucchini too, if you like it, layer on roasted red peppers, cheese, any other veggies (banana peppers, olive, roasted tomato, etc) drizzle with olive oil and fresh basil. Wrap tightly in some plastic wrap and press with a cast iron pan. Refrigerate for a few hours so the flavors all mix and the sandwich is really squished.

Edit - homemade (or not) pizza or bagel pizzas (can be without cheese if they don't like it or cold and unmelted, if they'll eat it that way).

fried rice or stir fry budha bowls (rice with all sorts of toppings) ramen veggie minestrone veggie lasagna black bean, spinach, sweet potato enchiladas buffalo cauliflower tacos with slaw & feta pasta with pesto and cherry tomatoes pasta with mushroom cream sauce shrimp louie salad with some good bread tofu teriyaki vegan butter chicken (made with tofu) also you can almost veganize any meal (just google vegan XXX whatever it is that you like or vegetarian xxx)
If you need something quick/easy, Trader Joes has their black bean taquitos again (they seemed to be out of them for awhile). My kids take them for lunch (eat cold/room temp).
Skinnytaste has a tab of vegetarian meals. I love the broccoli cheese and potato soup and there are some other great soups and pasta meals.
Other favorites are salmon filet with a little pesto on top. I like a thin slice of tomato on that and then bake it.
Hello Fresh sent me tortellini that yuh cook to directions, save 1/4-1/2 cup of the cooking water and then melt 2T of butter with 2 garlic cloves a 1tsp Italian herbs. Add the water and whisk until creamy and add the tortellini. Serve over roasted zucchini, yellow squash and tomato. So Good!!!!!
