Mac and cheese Mashed potatoes or stuffing/dressing depending on what we can find. Asparagus or corn, roasted A very small Pea and cheese salad. It’s my H’s family tradition and recipe. We make it every year Dessert will be, I am not sure yet,
We will also have pistachio fluff salad and a cheese ball and crackers.
Since it's always just the four of us, I don't usually do anything nice (I'm usually too tired from helping at the church Easter egg hunt the day before), but I think this year I'll probably make a nice meal. My family has requested the roast beef I made for Thanksgiving. I'll probably also do au gratin potatoes, green beans, stuffing, corn and I'm not sure what for dessert.
Dessert is hard, because one person doesn't like cake, another doesn't like pie, and the other doesn't care as long as it's good.
I ordered a ham for Eric to smoke. I will make Grandma nugget mac n cheese and spicy vinegar green beans. I plan on making a strawberry cake.
Green bean recipe please!
I don’t have anything written out it just is kind of thrown together.
Start with 1-2lbs of bacon. Dice it up and cooking it in a pot. Once the bacon is cooked I remove it and throw in an onion that has been (roughly) chopped. As the onion is cooking I throw in Tony’s Cajun seasoning. Sorry I don’t know exact amounts I just eye ball it. Add less if you don’t like spicy and add more if you do. I let the onions cook down then I add the green beans (1-2lb depending on how many people) and enough chicken broth to cover them. I throw half a stick of butter in on top and possibly some more Cajun seasoning. Let the green beans simmer until cooked. About 30min before serving I add the other half of the stick of butter (sometimes more depending on how many lbs if green beans) and a good healthy splash of vinegar. Add more Tony’s if you want. 15 mins before serving I add the bacon back in.
I usually do them in the instant pot on the sauté setting for the back in and onions and then switch it to slow cook for the actual green beans. I start them in the morning and just let them simmer all day until we eat.
We’re just doing the three of us. I got a bone-in ham and will do that, scalloped potatoes, a veg (depends on what’s on sale- likely broccoli or green beans steamed or roasted.
Hoping to get a lamb roast, if I don't I've got a beef roast I'll use instead. Potatoes and asparagus are coming in a veggie CSA-type pick up box, plan to use those. We've got plenty of eggs to dye and make deviled eggs with. Will bake rolls or something too.
Obviously we aren’t going to Connecticut for Easter with H’s family like we usually do so I guess we’re on our own? We’re not going to get together with my parents because that would be too much togetherness (we’ve seen them but it’s been Ellie waving from the car or street or me going in and just doing what I came for, not hanging out). There’s also no church which I’m ok about but H is bummed. Lol
So now I get to make whatever I want and I think I want lamb. I have never made a leg of lamb before-does anyone have any tips?
I could also do a baked ziti or stuffed shells. Maybe steaks? Roast chicken? I asked MH and he doesn’t have an opinion. Our 10th wedding anniversary is a couple days before Easter and we don’t have anything planned for that either ... maybe takeout would be a nice break. Me not having to cook would be enough of a celebration.
I found a recipe for steamed soup dumplings that I’d like to try, but I need a bamboo steamer basket.
I’m not going grocery shopping again until we run out of milk. If I don’t wind up getting anything special before Easter then based on our current supplies it’ll likely be a chicken and pasta dish I guess.
Normally we end up eating a ham and cheesy potato dinner with my in-laws that both my H and I are kind of meh about. Since it will just be the two of us this year, I'm going to make pork schnitzel, cheese spaetzle, and applesauce. Then I'll finally break into the Easter candy for dessert.
