We are on vacation. I’d planned most of the meals, but my nephews eat more than I’d planned so I need to add a few things.
Sat: hot dogs and burgers, salads Sun: steak tips, turkey tips, tortellini caprese salad
We will have tenderloin tails and smashed potatoes one night; seafood night - scallops, swordfish, mako shark, leftover tenderloin tails for those that don’t eat seafood; a night of takeout; another night of ice cream for dinner; one night will be sandwiches at the beach.
We don't have central air, and its supposed to be in the 90's all week here, so making dinners in the crockpot or on the grill for the most part, which don't heat up the house too much. Monday - BBQ chicken tacos (crock pot) Tuesday - Steaks on the grill with asparagus (leftover tacos for the kids) Wednesday - Pot roast and carrots (crock pot) Thursday - Leftovers Friday - Basil avocado pasta or pasta with white sauce, the kids like the white sauce.
Got my act together last night. Monday - Honey mustard chicken and veggies Tuesday - Leftover chicken as a wrap Wednesday - Breakfast for dinner Thursday - Tacos Friday - Chicken tikka masala Saturday - TBD
I also prepped myself a week of salads with roasted chickpeas and a scoop of the best egg salad on the side for lunches all week.
