I got my early glucose test results back and I passed -- yay! -- but they mentioned my reaction was actually under what they'd expect. Basically they said I'm more prone to blood sugar drops and recommended I snack more frequently / get more protein in daily. (Which probably explains the daily complete crash I experience around 2/3p.)
Any suggestions on easy ways to do that, other than "eat more lean meat" (because all meat sounds terrible right now)? ETA: I'm in the office 2x/wk right now, so bonus points for things that can easily travel and such.
My go-to's for protein when I had GD were pepperettes (sorry, meat), cheese and crackers, or protein bars.
I also make a breakfast smoothie with low-sugar fruit (ie strawberries) and put a serving of hemp hearts in. They have lots of omegas and protein. They're also great on avocado toast!
Oh- also fat bombs can have a good amount of protein depending on how you make them. My naturopathic doctor's go to recipe is 1/2 c peanut butter, 1/2 c coconut oil, 1/4 c cocoa powder, 1/2 c maple syrup. Melt in a double boiler and stir until well mixed. Freeze in ice cube trays or a silicone mold. But you definitely have to store these in the fridge or freezer if you don't want a big mess.
Greek yogurt, cheese, nuts, nut butters, edamame, eggs if you can stand it. ETA: if yogurt by the spoon does not appeal, how about kefir?
Fiber will likely also help with satiety and smoothing out your blood sugar curve. Grape Nuts cereal, beans, avocado, edamame, veggies, chickpeas, lower sugar fruits.
I love this salad: 86lemons.com/edamame-power-salad/ for high protein & fiber. I loved it long before pregnancy, but it was great for me when I had GD. If you keep the dressing separate in the fridge you can make a batch and take it for lunch all week.
Greek yogurt with Grape Nuts cereal instead of granola and a low-sugar fruit like raspberries is a go-to breakfast for me. It gets you high protein & fiber without much sugar to spike you. When I had GD I couldn't afford the carbs in the Grape Nuts without a spike (I was most sensitive at breakfast time) but it sounds like you would be fine with that.

Thank you achi and Susie! I hadn't thought about things like hemp hearts, edamame, fat bombs, adding fiber, etc. I'm going to add some of this to my grocery list for next week. Thank you, thank you!
Good luck! It can be overwhelming at first, but if you aim to add a little extra and make sure your snacks have protein it really helps. The hemp hearts have 10g of protein per serving, so that adds up quickly!
