Like many here, we are in the middle of a huge kitchen remodel. My contractor asked us today if we wanted under-cabinet lighting (which we had previously, however it hadn't worked in a couple years). We said yes, even though he said the fixtures themselves are pretty pricy (apparently the wiring is not).
Do any of you have lighting you recommend/love OR that you suggest I avoid? I'm going to try to shop around to find a good price (I don't trust that my contractor gets them cheaper) and have them installed when the time comes.

I don’t know if you have it in the US but we installed a lighting system from Lee Valley Tools in our last house. Very easy, did it ourselves, cost about $150CDN all in and that was 5 years ago and LED lighting is much cheaper now.

Our contractor recommended Lee Valley as well. We had it installed by an electrician through our general contractor for $750 Cdn all-in (wiring, switches, etc). Sounds like we overpaid, lol.
We used Inspired LED. they put the plan together and we installed. Our kitchen had hard wiring available already. Was really happy w how it turned out.

The LED lights of today are so much better than the lighting we had ages ago. Obviously as we're in the UK, the fixtures will be different, but we have ones that look like below and they are great:
