We use rotisserie chicken in pretty much anything that requires chicken as an ingredient, especially if you have to cook the chicken as a first step. I have made some of these. One of my faves is bbq chicken pizza.
On DD's favorite Chicken Pot pie. We mix a large can of cream of mushroom and a small cream of celery. Add mixed vegetables and chicken and mix. Put in baking dish. Mix Bisquick, egg, and milk. Pour over top of chicken and veggies. Bake until top is done and golden. DD could eat it every week.

Chicken enchiladas- I have two recipes
1. Put Shredded chicken, mex mix cheese, sautéd veggies (onions and peppers) into rolled tortillas. Top with red enchilada sauce and cheese and bake 30-45 minutes until warm throughout and melted. Top with sour cream and serve
2. Mix shredded chicken, refried beans, sour cream, jack cheese, black olives, 1 packet taco seasoning in a bowl. Fill pan with stuffed rolled tortillas. Top with mild green enchilada sauce and mex mix cheese. Bake 30-45 mins until warm throughout and melted.
