We have one attached to the side of our cabinet. We have a window over the sink and it is on the cabinet side to the left of the sink. It is vertical and the kind you just slide the roll on a pole. We don't have a ton of counterspace and the under cabinet seemed low to us.
Like this one -- but vertical instead of horizontal mount

We also have a countertop one. I used to keep it in the pantry but my family rebelled. We mostly use it for compost type messes, and for dairy products so our rags don’t get stinky.

Countertop. I wish we could move away from them but my MIL is non-compliant with all cleaning stuff (she still tries using a well used sponge to clean surfaces...ugh. I yell at her every single time I catch her in the act as I make sure there are plenty of new clothes under our counter to use).
Like others, I'm trying to use fewer paper towels but the barfing cats aren't cooperating.
I have a magnetic paper towel holder (link to similar below). In my last kitchen, I had it attached to the side of the refrigerator. I didn't have a lot of counter space and this was convenient. In my current kitchen, I have even less space and the side of the refrigerator isn't as good an option so it sits on the top of the frig. Luckily, I'm tall. One of my cats likes it too, as it makes it easy when he's in the mood to shred something.
We have ours on a counter top holder. I also use rags for a lot of stuff and have them in two places. For the smaller ones, I keep them in an old popcorn bucket under the sink, and for the larger ones, I have a reusable grocery bag in the hall closet and keep them in there.

We have a paper towel holder attached to the inside of the cabinet under the sink. We primarily use microfiber wipes, but keep paper towels around for the grossest messes. We keep the cloths in a box under the kitchen sink.
For those who use rags, where do you keep those? We are getting better about using rags, but the basket of rags in my dining area is an eyesore.
Dish cloths/hand towels and kitchen towels live on a shelf in the cabinet over our sink. Easy, since it is just adults and that location is convenient... also, the cabinet is in line with our other upper cabinets so it isn't too high, even for my height challenged (adult) daughter. We keep rags in the cabinet under the sink, next to the basket for the used towels, for anything really bad.
We bought a lot of white 'bar towels' to use for pet cleanup. Those are dispersed around the house, so they are readily available (we had four senior dogs)...in cabinets in bathrooms, a cabinet in the living room, a bin in the back hall. It just makes it easier to take care of things quickly, and in a pinch I can grab a 'dog towel' (which are washed separate from ours) if/when I spill my chai, since it is closer than getting one from the kitchen.
We use microfiber cloths. I keep the clean ones in the laundry room and usually have one on the counter which is admittedly super classy. Dirty ones go back to the laundry room. If we had room, I’d keep a stack of clean in the kitchen somewhere, but we don’t and luckily the laundry room isn’t too far.
