What are you eating this week? I feel so meh about menu planning this week and still need one more day.
Friday: Greek takeout Saturday: sheet pan roasted smoked turkey sausage, potatoes, broccoli, and cauliflower Sunday: it's just DH and I and we'll probably have a late lunch, so just leftover pita and hummus most likely Monday: barbacoa burrito bowls Tuesday: spiced lamb patties, naan, village salad, tzatziki Wednesday: chicken parm, pasta, broccoli Thursday: who the heck knows....
We’re on a Wed-Tues meal planning schedule right now. This week, we had:
Wed: Beef and Cabbage soup with Bread Thurs: Take out (KFB) Fri: Sheetpan Teriyaki Salmon with Broccoli and Peppers Sat: Chicken & Dumplings Sun: Halloween-shaped pasta with marinara and meatballs Mon: Leftovers Tues: Tacos/Nachos
Tonight: Baked chicken and a salad. Tomorrow: Chicken soup Monday: Steak and potato with veggies Tuesday: Ground turkey and brown rice stuffed acorn squash Wednesday: BBQ Pork with corned bread, baked beans and green beans Thursday: Chicken meatballs over pasta
It's super easy, and the sauce is delicious. I usually double the sauce and use half for leftovers or other things. I make it as directed, then just keep adding peanut butter until I get the taste and consistency I want.

Tonight: Ordering Thai Tomorrow: Football hamburgers (basically browned meat in sauce with cheese wrapped in dough) Monday-Wed: Home Chef Thursday: Taco truck Friday: Creamy chicken and poblano chowder Saturday: Maybe order pizza since it’s Halloween? Not sure...
It’s surprisingly warm so this is all a bit tentative.
Salmon salad
Lamb stuffed squash
Chicken meatballs, some sort of sauce, over mashed potatoes
Pork chips with wild rice and broccoli
Japanese curry with chicken
Slow cooker beef chili or stew (if the weather holds and we can get the roof done—I know I won’t want to do any hands on cooking)
Japanese curry with chicken? More info please and thank you! I never met a curry I didn't like, but have never had Japanese curry.
It’s really tasty! It’s not terribly spicy but it is really savory. Normally I made it with beef and in the slow cooker but we have chicken. You can buy cubes of the seasoning (S & B Golden Curry is the most popular, I think—they also make the curry powder you need for making it from scratch) or you can make it yourself pretty easily.
I’ve found the cubes in regular supermarkets here like Safeway so it’s not too hard to find. I normally make it from scratch because I have a huge jar of the powder.
NYT also has a recipe for making the cubes yourself which is interesting

The S&B curry cubes really are very tasty. I love doing a simple veg curry with big chunks of carrots, potatoes, and onions. I usually go lighter on the broth to keep the consistency thicker.

If you have Japanese sweet potatoes, they are very good instead of regular potatoes too. It’s really the only way I like sweet potatoes; it helps thicken it up too.
Sunday: Fish fry with my family, frying fish caught at the coast this summer. I need to bring dessert- looking for a yummy cake recipe, maybe pineapple upside down cake? Would love a good rec.
Monday: Spatchcock chicken on BGE Roasted acorn squash with brown sugar oven roasted veggines
Last night my friend made pork green chile huevos rancheros. SO good. Tonight is a pot roast with potatoes, carrots and onions Monday: homemade chicken noodle soup Tuesday: chicken parm with spaghetti/zoodles, roasted broccoli Wednesday: arroz con pollo to make some thing for DS1’s Spanish class Thursday: going to dinner with my BFF and two of her friends Friday: not sure yet Saturday: getting together with friends for Halloween, probably chili or something like that
