Help me use up the crazy quantity of dried goods I bought in March when the store shelves were bare and I was pandemic hoarding. I have a tons of beans, espcially the 15 bean mix, LOADS of brown lentils (sadly, I much prefer red lentils, so I just keep ignoring them) and a fair bit of various grains. I enjoy these foods but I’m looking for recipes that are REALLY GOOD! It seems like I keep making bean stews that are rather blah.

I make lentil shepherds pie, lentil tacos (https://minimalistbaker.com/1-pot-vegan-barbacoa/ ) lentil soup, and various dal recipes with lentils. I’m not sure what grains you have we like farro or quinoa with (veggie) sausage, roasted veggies and lemon. We also use quinoa for rice a lot. Or use whatever grain you have as the base of a burrito bowl.

I donated our bean hoard to the food bank. I do love red beans and rice, and feel like it makes meat go a very long way. You can do it with other meats or even without meat, but I like this recipe, though I leave out the bell pepper because I hate it and add a can of tomato paste, and add some other spices, like oregano, since I grow it in my yard, and like many of the comments say, I use chicken stock, instead of water. I do not serve it with rice. We are doing the same thing. I've decided supply chains are stabilized, online shopping is much easier, and we are likely headed out of this (although extremely slowly) so there is no point in continuing to hoard beans and grains. Also we have a ton of milk because of the school lunches and breakfasts delivery.
Conveniently we got an instant pot for Xmas so that is helpful for me.
All of these are instant pot things for me, but you can do them in a crockpot or oven too. All are random recipes I googled and didn't follow exactly.
-black eyed peas with herbs and some diced onion -lentil sloppy joes -rice pudding -black beans and pinto beans for rice and beans (basically make your own chipotle bowl) and bean tacos -mixed bean and veg soup (bean mix + whatever diced veg we have around and canned diced tomatoes) -rice or really any grain for the kids to eat plain, or with cheese -fried rice
Nothing fancy, but we are slowly working our way through the stash. I only spent 25$ on groceries this week between using up pantry stuff and all the school food which we barely keep up with even with H and I helping eat it.

We also do bbq sandwiches made from lentils. I saute onion, add brown lentils, water (that will absorb) and bbq sauce. Once lentils are tender and water is absorbed I add more bbq. I love these on a toasted bun with smashed avocado or guacamole.
Mujadara is delicious. Make sure you really caramelize the onions and cook the lentils and rice separately (otherwise your lentils will be overcooked). You should be able to find harissa sauce at your regular grocery store. I think Mina is the brand King Soopers (Kroger) carries.
I enjoy this for breakfast or lunch/dinner. It's great for meal prep. You can make the grain/onion mix in advance and just heat it up and top with a fried egg.

It's important to season it well. Caramelize the onions well to get good flavor from those, make sure you salt well, add the cumin, etc. The harissa adds a lot of flavor too. It's definitely not blah if you season it well.

This looks great and my husband loves sausage. I made him a sausage mushroom soup on our first date that won him over. 🥰 I’m going to make it for our next “Soup Saturday” and try freezing half.
I love lentils but feel like I am one of the unlucky few whose stomach can’t tolerate them. Does anyone else have this issue and is there a fix? I want to embrace a more vegetarian-style life but all of the vegetarian protein options don’t seem to agree with my stomach

I think the best way to acclimate yourself is to just start with small amounts. I'll be honest, when I transitioned to a plant based diet my stomach probably took 1.5 years to adjust. I have a friend that won't eat a very long list of healthy foods because they make her gassy. It's mostly fiber rich food, but we need that in our diet. I also use digize which is an essential oil that can help with digestion, bloating, etc...
ETA-When you eat beans soak them for a long time. I haven't tried soaking lentils so not sure if would help with those. But for beans, I soak for 24 hours. I then bring them to s boil, drain and rinse, then proceed to cook them. I think it helps.
I add beans a lot to baked goods that I make for my kids snacks. I just google and there's a bunch of recipes and I choose based on what I have on hand. Lentils, black beans, and navy beans I've used and they've all been good.
